Roasted Corn Salsa Recipe
“I love the combination of flavors in this salsa, especially the contrast of the sweet corn against the spicy peppers. My family was crazy about it too. I opened a bag of tortilla chips so we could all give it a try and my husband nearly finished an entire jar himself in one sitting. Living on a farm in the Midwest, we really DO have an abundance of sweet corn. You can only consume so much corn on the cob before you never ever want to eat another ear of corn, so this is a great way to use up our corn and still enjoy it. This way I will always have something to take along when we get invited over to a friend’s house as well.
