Weight Watchers Moroccan Chicken Soup Recipe
“I love the flavors of Morocco, and this Weight Watchers Soup made Moroccan style was an easy and delicious dinner. Spices like turmeric and cumin add such an interesting and complex flavors. Each time I use these two together, I wonder why I don’t do it more often.
I started off with a baked chicken recipe with lemon and herbs. It turned out great, and we had quite a bit left over that I decided to turn into soup the next day. If you want to do exactly what I did, brine the chicken and bake in a 400° oven with fresh thyme and parsley for 30 minutes.”
My Grandmother always “cooked once and ate twice”. That was her rule. Whenever she cooked chicken especially, she would cook a double batch so we had leftovers. But we never even knew we were eating leftovers. It never even crossed our minds. She had so many great recipes that she was always cooking for us.
Now that I’m following the Weight Watchers Lifestyle, I’ve taken my Grandmother’s concept and started using it. And since I can find chicken on pretty good sales, we eat a lot of it. This soup recipe has been a favorite in our house. It tastes so good, and is so easy to throw together.
