Amazing Summer Desserts
Summer desserts are always put out on the picnic table after we pig-out for the day. From the beginning of time we’ve enjoyed using our fruits to help the cravings of the sweet tooth. We’ve learned to create some awesome dishes over the years that you often think of for summer. They are the staples, the must haves.
I have the best Strawberry Parfait recipe I want to share with you all today. You are going to absolutely to love eating this delicious strawberry parfait on a warm summer evening. My kids ALWAYS ask me to make this dessert. Check out the recipe at the bottom of the page.
It’s time to add in some interesting twists on some of our favorites. Go ahead take your fresh strawberries, cherries, limes, and create something that will have your friends and family members talking about for weeks.
Besides our fruit recipes there certainly would not be summer cookout without chocolate, marshmallows and graham crackers. So we’ve even added an awesome S’mores recipe to cover that favorite as well.

Strawberry Parfait Recipe

How long can the strawberry parfait keep in the refrigerator?
This parfait will keep in the refrigerator for up to three days and still be amazing on the 3rd day!
Can I use other fruits or just strawberries?
Knock yourself out. Use any fruit you want. I often change out the strawberries for raspberries. I have even been known to use blackberries!
What does parfait mean?
Parfait is a dessert consisting of layers of ice cream, fruit, etc., served in a tall glass or a rich cold dessert made with whipped cream, eggs, and often fruit.
Strawberry Parfait Recipe
4 cups sliced strawberries, divided
1/4 cup granulated sugar
1 cup fat-free ricotta cheese
1/2 cup (4 ounces) 1/3-less-fat cream cheese, softened
1/4 cup powdered sugar
1 tablespoon water
1 teaspoon vanilla extract
1 cup amaretti cookie crumbs (about 8 cookies)
1/2 cup frozen reduced-calorie whipped topping, thawed
Place 2 cups of strawberry slices and granulated sugar in a blender or food processor, and process until smooth. Set strawberry puree aside.
Combine ricotta and next 4 ingredients (ricotta through vanilla) in a medium bowl; stir well with a whisk. Spoon 2 tablespoons cookie crumbs into each of 4 parfait glasses.
Top each portion with 2 tablespoons strawberry puree, 1/4 cup strawberry slices, and 3 tablespoons ricotta mixture; repeat the layers.
Drizzle the remaining strawberry puree over each serving.
Chill for 2 hours. Top each parfait with 2 tablespoons whipped topping.
