Best Bean Recipes – Summer Edition
Summer always seems to scream barbeque with baked beans, at least that’s how I fondly remember our family Summer Cookouts throughout the years. With the infusion of Tex-mex, Cajun and Mexican flavors our traditional baked beans have evolved!
In today’s world most people are cutting back on meat and poultry consumption and our culture has turned to healthy beans to take the front of our food scene. Some of this is due to economics and dietary needs, other people just plain love beans! Many of us are going Vegan or have incorporated more Vegan into our diets. If you or someone on your invite list is vegan we have some delicious meat alternatives featured here as well.
These recipes’ ingredients will be a hit to add to your shopping list for all the Summer Get-Togethers and BBQ’s. You will be the host or hostess with the summer most-est. TOP QUESTIONS I GET ASKED ABOUT THIS RECIPE:
Can I keep this in the refrigerator and use as leftovers?
Yes. I do this all the time. Just be aware that after a day or so the dish will get a little soggy. So eat as soon as you can so this dish is the freshest!
Can I use other types of beans in the recipe?
I don’t see why not, the recipe does call for red beans though. I bet black beans would be good instead of red beans, maybe even pinto beans.
Does this recipe give you gas? – Seriously. I get asked this all the time.
This recipe is like all bean recipes, beans contain oligosaccharides which is too big on a molecular level to be absorbed by the body. This is what makes you toot! For me though I don’t suffer with this recipe.
Light Red Beans and Rice
1 tablespoon olive oil
2 large cloves garlic, lightly crushed with the side of a knife blade and minced
1 large red onion, diced
1 stalk celery, diced
1 green bell pepper, stem and seeds removed and small diced
2 (1-pound) cans red kidney beans
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon hot sauce
2 1/2 cups chicken stock
1 cup white rice
1 tablespoon butter
1 tablespoon minced fresh cilantro leaves
Heat the olive oil over medium to medium-high heat in a large saucepan. Saute the garlic, onion, celery, and bell pepper until tender. Stir in the kidney beans, onion powder, salt, pepper, and hot sauce. Reduce the heat to low and let mixture simmer while you cook the rice.
Bring the chicken stock to a boil and stir in rice and butter. Return to a boil, reduce heat to low, cover and cook for 20 minutes. Remove from heat and let stand for 5 minutes.
Fold rice and beans gently together and transfer to a serving dish.
If you want to use other beans I would use a red bean mix!
