  • 1 whole California avocado ripe, peeled, and pitted
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 2 slices rustic sourdough bread thick
  • 2 large eggs preferably organic
  • 1 tablespoon white vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 small radish thinly sliced
  • 1 tablespoon microgreens for garnish
