These Belgian waffles use baking powder instead of yeast and get their lift from beaten egg whites folded into the batter — a small extra step that makes a real difference in texture. The result is a waffle with a genuinely crisp shell and a soft, airy inside, not a dense, cakey slab. They take about 35 minutes start to finish, and they reheat well, which makes a double batch on Sunday worth the effort.

Ingredient notes

  • Whole milk: The fat content matters here. Skim or low-fat milk will give you a thinner, less rich batter. If whole milk isn’t on hand, half-and-half works fine.
  • Unsalted butter: Salted butter can be used — just drop the added salt to a pinch. Let the melted butter cool for a minute or two before mixing it in so it doesn’t scramble the yolks.
  • Baking powder: Check the date on the tin. Old baking powder is the most common reason waffles come out flat and dense. If yours is more than six months open, test it in hot water before you start.
  • Vanilla extract: Any pure vanilla extract works. Skip imitation vanilla if you can — the flavor is noticeably thinner once cooked.

Why this recipe works

Two things actually drive the texture here. First, the egg whites are beaten and folded in separately. This traps air in the batter that baking powder alone can’t create, which is why the inside stays light instead of turning gummy. Second, the batter uses melted butter rather than oil. Butter has water in it that steams during cooking, helping the waffle release cleanly from the iron and giving the crust a better color. Neither step is complicated, but skipping either one will cost you in the final texture.

Troubleshooting

  • Waffle sticks to the iron: The iron wasn’t hot enough before you poured the batter, or it wasn’t greased well enough. Let it preheat fully — most irons need 3 to 5 minutes — and re-grease between every waffle, not just the first one.
  • Waffle is soft instead of crisp: Steam is the enemy of crispness. Don’t stack waffles on top of each other; they’ll steam themselves soggy. Place them in a single layer on a wire rack, or keep them in a 200°F oven directly on the oven rack.
  • Batter is too thick to pour: Flour can pack down in the measuring cup. If the batter is stiff rather than pourable, stir in whole milk a tablespoon at a time until it flows easily. Sifting the flour first, as the recipe suggests, helps prevent this.
  • Waffles are pale and not browning: The sugar in the batter is what drives browning. If you cut the sugar to reduce sweetness, expect lighter color. Cooking slightly longer at the same temperature is the fix — don’t crank the heat, which burns the outside before the inside sets.
  • Reheated waffles go limp: A toaster is better than a microwave for leftovers — skip the microwave entirely, it just makes them chewy. A toaster or a 375°F oven for 5 minutes brings the crust back close to fresh.

  • In a clean bowl, beat the egg whites until soft peaks form. This can be done by hand or with a hand mixer—look for whites that gently hold their shape but are still glossy.
  • Carefully fold the egg whites into the batter using a rubber spatula, using gentle sweeping motions to keep as much air in the batter as possible.
  • Preheat your waffle iron according to the manufacturer’s instructions (usually to medium-high, about 375°F / 190°C). Lightly grease with butter or oil spray.
  • Pour about 1/2 to 3/4 cup of batter into the center of the hot waffle iron. Close and cook until the waffle is golden brown and crisp—about 4–5 minutes, depending on your machine.
  • Remove and serve immediately, or keep warm in a 200°F (95°C) oven on a wire rack while you prepare the rest.

Can I make the batter ahead of time?
