These pumpkin waffles come together in 25 minutes from a short list of pantry ingredients — flour, canned pumpkin, milk, one egg, and a few spices. The pumpkin keeps the inside soft while the iron crisps the outside, and the spice level is mild enough that kids eat them without complaint. If your waffle maker has been sitting in a cupboard, this is a good reason to get it out.

The technique that matters

The only technique worth slowing down for is the mixing step. Once the wet ingredients hit the dry, you fold — not stir — and you stop the moment the flour disappears. A lumpy batter is correct. The gluten in the flour hasn’t had time to tighten up, which means the finished waffle stays tender inside instead of turning chewy. The second thing that matters is reading your waffle iron’s steam: don’t lift the lid early. When the steam coming from the sides drops off noticeably, the waffle is done. Opening it before that point tears the waffle in half because the crust hasn’t fully set.

Ingredient notes

  • Pumpkin puree: Use plain canned pumpkin, not pumpkin pie filling. Pie filling already contains sugar and spices, and the amounts vary by brand, so your waffles will come out unbalanced.
  • Milk: Whole milk gives the richest result, but 2% works fine. Non-dairy milks (oat, almond) also work — oat milk in particular holds up well here.
  • Butter: Melt it and let it cool for a minute before adding to the wet bowl. Pouring hot butter straight onto the egg can partially cook it.
  • Spices: The cinnamon, ginger, and nutmeg amounts in this recipe are intentionally restrained. Skip the urge to double them — the pumpkin flavor comes through better this way, and it keeps the waffles kid-friendly.

Leftovers and make-ahead

Cooked waffles keep in the fridge for up to 3 days in an airtight container, or in the freezer for up to 2 months — stack them with a small piece of parchment between each one so they don’t fuse together. To reheat from the fridge, a toaster on a medium setting takes about 2 minutes and brings the crispness back better than a microwave does. From frozen, go straight into the toaster on a slightly lower setting for two cycles, or into a 350°F oven for 8–10 minutes on a wire rack. Skip the microwave entirely — it makes them soft and a little gummy. The dry ingredients can also be whisked together the night before and left covered on the counter, which cuts the morning prep down to under 5 minutes.

What can go wrong

  • Waffles stick to the iron: Even a non-stick waffle maker needs a light coat of cooking spray or brushed oil before the first waffle. After that first one, re-grease every second or third waffle — the iron dries out as it heats up.
  • The outside browns but the inside is still wet: Your iron is running too hot, or you’re using too much batter. Reduce the heat setting by one notch and measure your pour — more batter doesn’t mean a better waffle, it just means an underdone center.
  • Waffles come out pale and soft all over: The iron wasn’t fully preheated. Give it an extra 2–3 minutes after the indicator light says it’s ready, especially on the first use of the day.
  • Batter seems too thick to pour: Pumpkin puree varies in moisture content between brands. If the batter is stiff, stir in milk one tablespoon at a time until it pours easily — skip the garnish of extra spices on top at this stage, not worth the extra dish — just get the consistency right.
  • Waffles deflate and go limp quickly: They’re sitting on a flat plate. Steam trapped underneath softens the bottom fast. Move finished waffles to a wire rack immediately, even if you’re serving them in the next few minutes.

Ingredients
 
 

  • 1¼ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ⅛ teaspoon nutmeg
  • 1 cup milk
  • ½ cup pumpkin puree (canned, not pumpkin pie filling)
  • 2 tablespoons unsalted butter, melted
  • 1 medium egg

Instructions
 

  • Whisk flour, sugar, baking powder, cinnamon, ground ginger, salt, and nutmeg.
  • In a separate bowl, whisk together the milk, pumpkin puree, melted butter, and egg until smooth.
  • Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined — a few small lumps are fine. Do not overmix or the waffles will be tough.
  • Preheat your waffle maker and lightly grease if needed. Pour approximately ⅓ to ½ cup of batter onto the centre of the hot waffle iron (amount varies by waffle maker size). Close the lid and cook for 3–5 minutes until the steam slows and the waffle is golden brown and crisp.
  • Serve immediately topped with butter and warm maple syrup. For extra crunch, transfer cooked waffles to a wire rack in a 200°F / 95°C oven to keep warm and crispy while you cook the remaining batch.

Common questions

Can I use fresh pumpkin instead of canned?

You can, but the results are less consistent. Fresh pumpkin puree holds more water than canned, which can make the batter too loose and the waffles steam instead of crisp. If you use it, drain the fresh puree in a fine-mesh strainer for 20–30 minutes first, then measure.

Can I make the batter the night before?

It’s better to prep the dry and wet ingredients separately and combine them in the morning. Mixed batter left overnight loses some of its lift because the baking powder starts reacting as soon as it contacts liquid. Keeping them separate takes 30 extra seconds and gives you noticeably fluffier waffles.

Do I need a Belgian waffle maker, or will a standard one work?

A standard waffle maker works perfectly well with this batter. Belgian irons produce deeper pockets that hold more syrup, while standard irons give you a thinner, slightly crispier waffle — both are good outcomes here, just different.

Can I make these dairy-free?

Yes. Swap the milk for oat milk or another unsweetened non-dairy milk, and replace the butter with melted coconut oil or a neutral vegetable oil in the same quantity. The texture stays close to the original.

Why does my first waffle always turn out worse than the rest?

The first waffle is essentially a test run — the iron’s surface temperature evens out after that initial cook. Treat it as a tester, adjust heat or batter amount if needed, and don’t worry if it looks a little rough.
