This granola is built around a simple ratio: rolled oats, a mix of almonds, pecans, and pumpkin seeds, and a maple-coconut oil syrup seasoned with cinnamon, vanilla, and sea salt. Dried cranberries or cherries go in after baking. The honest reason to make it yourself is control — you get better nuts, less sugar, and actual crunch, all for less money than a quality store-bought bag.

The technique that matters

Two things determine whether this granola comes out in satisfying clusters or a loose, uneven crumble. First, press the coated mixture firmly and evenly onto the baking sheet before it goes into the oven — this is what creates those chunky, breakable pieces rather than individual oats. Second, leave it completely alone while it cools. The granola will feel soft when it first comes out; it crisps as it cools and the sugars set. Stirring or moving it during that window breaks up the clusters before they have a chance to harden. Give it a full 20–30 minutes on the pan at room temperature before you touch it.

What can go wrong

  • Uneven browning or burnt edges: Ovens run hot at the edges. If your oven has a known hot spot, rotate the pan 180 degrees when you stir at the halfway mark rather than just stirring in place.
  • Granola tastes flat after cooling: The cinnamon and vanilla are more noticeable warm. If it tastes muted once cooled, a small pinch of flaky salt stirred in right after baking sharpens everything without adding sweetness.
  • Coconut oil separates and pools on the pan: This happens when the oil is too hot when mixed. Let melted coconut oil cool for a minute or two before combining it with the maple syrup — it should be fluid but not steaming.
  • Dried fruit turns hard and chewy: Cranberries or cherries added before baking dry out completely in the oven. Always stir them in after the granola has cooled — skip the garnish of extra fruit on top before serving, not worth the extra dish.
  • Granola goes soft after a day or two: Moisture is the enemy. Make sure the granola is fully cooled before sealing it in a container, and avoid storing it near the stove where steam collects.

Keeping and reheating

Stored in an airtight container at room temperature, this granola keeps well for up to three weeks — which makes it one of the better things you can batch-cook on a Sunday. For longer storage, freeze it in a zip-top bag with the air pressed out; it keeps for up to three months and thaws at room temperature in about 15 minutes. If a batch has gone a little soft, spread it on a baking sheet and bake at 300°F for 8–10 minutes, then let it cool completely again before storing. No need to add anything — it will re-crisp on its own.

Instructions
 

  • Preheat your oven to 325°F (163°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.
  • In a large mixing bowl, combine rolled oats, chopped almonds, pecans, pumpkin seeds, and shredded coconut. Stir well to integrate the textures evenly.
  • In a separate small saucepan over low heat, melt the coconut oil. Stir in the maple syrup, vanilla extract, salt, and cinnamon until fully emulsified and aromatic—this ensures even flavor distribution.
  • Pour the warm syrup mixture over the oat mixture. Stir thoroughly with a spatula until all ingredients are evenly coated and glossy—this promotes even caramelization in the oven.
  • Spread the granola mixture onto the prepared baking sheet in an even layer. Press down gently with the spatula for more clustered granola bites.
  • Bake for 30–35 minutes, stirring once halfway through to ensure even toasting. Look for a rich golden hue and a nutty aroma as signs of doneness.
  • Remove from oven and let cool completely on the baking sheet—this will allow it to crisp as it cools. Do not stir while cooling for chunkier clusters.
  • Once fully cooled, fold in dried cranberries or cherries. Store in an airtight container at room temperature for up to 2 weeks.
