This zucchini bread uses a mix of all-purpose and whole wheat flour, two sugars, and fresh grated zucchini to produce a moist, lightly spiced loaf that slices cleanly and keeps well for days. It comes together in about 15 minutes of hands-on work, which makes it genuinely practical when you need to bake for a group and don’t want to spend the afternoon in the kitchen. Optional walnuts and raisins are easy to scale up or leave out depending on who you’re feeding.

Before you start

The single most important step is handling the zucchini correctly. Fresh zucchini holds a lot of water, and if you add it straight to the batter without any thought, the extra moisture can make the center of the loaf dense and slow to set. You don’t need to salt and press it dry — the recipe is balanced for zucchini used as-is — but do grate it just before mixing and measure it loosely packed, not compressed into the cup. The second thing that matters is not overmixing once the wet and dry ingredients come together. A few streaks of flour are fine; stirring until the batter is perfectly smooth will tighten the gluten and give you a tougher crumb. Fold until just combined and stop.

Substitutions that actually work

  • Vegetable oil: Any neutral oil works — canola, sunflower, or light olive oil. Melted coconut oil also works but adds a faint coconut flavor.
  • Whole wheat flour: If you only have all-purpose, use 2 cups total. The loaf will be slightly lighter in texture and milder in flavor, which most kids prefer anyway.
  • Brown sugar: Light or dark both work. Dark brown sugar gives a stronger molasses note; light is more neutral.
  • Walnuts: Pecans are a direct swap. Skip the garnish of nuts pressed on top — not worth the extra step since they tend to burn before the center is done.
  • Raisins: Dried cranberries or chopped dates work well. If you’re baking for a crowd, leave the add-ins out of the main batter and set them out as toppings so people can customize their slice.

Leftovers and make-ahead

Once fully cooled, wrap the loaf tightly in plastic wrap or store slices in an airtight container at room temperature for up to 3 days — it actually gets a little moister on day two. For longer storage, refrigerate for up to a week, though the texture firms up slightly when cold; a 15-second microwave warm brings it back. This bread freezes very well. Wrap individual slices in plastic, then place them in a zip bag and freeze for up to 3 months. Pull out as many slices as you need the night before and let them thaw at room temperature. If you’re baking ahead for guests, the whole unsliced loaf freezes just as well — wrap it tightly in two layers of plastic and one of foil.

What can go wrong

  • Loaf is wet or gummy in the center: Your zucchini was likely very large and watery. Next time, grate it, then blot it briefly with a paper towel before measuring. Also check that your oven temperature is accurate — ovens that run cool are the most common reason quick breads underbake.
  • Top cracks and browns too fast: This is normal for quick breads and not a problem, but if the top is darkening well before the center is done, tent loosely with foil after the first 35 minutes.
  • Bread sticks to the pan: Greasing alone sometimes isn’t enough, especially with a sugary batter. Use parchment with a small overhang on the long sides so you can lift the loaf straight out.
  • Batter is too thick to pour: Zucchini size varies a lot. If your 2 cups of grated zucchini came from a small, firm zucchini with less moisture, the batter may be stiff. Add 1 to 2 tablespoons of water or milk and fold gently until it loosens.
  • Doubling the recipe causes uneven baking: If you’re making two loaves at once, rotate the pans halfway through baking and add 5 minutes to the total time. Don’t stack them on the same rack.

  • 1 cup all-purpose flour Organic for best results
  • 1 cup whole wheat flour Preferably stone-ground
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt Kosher
  • 1 teaspoon ground cinnamon Preferably freshly ground

Wet Ingredients

  • 2 large eggs At room temperature
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar Packed
  • 2 teaspoons vanilla extract Pure
  • 2 cups grated zucchini Fresh, unpeeled

Optional Add-ins

  • ½ cup chopped walnuts Toasted for extra flavor
  • ½ cup raisins Plump and fresh

Instructions
 

  • Preheat your oven to 175°C (350°F). Grease a 9x5-inch loaf pan, or line it with parchment paper for easy removal.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, beat the eggs until light and frothy. Add the vegetable oil, granulated sugar, brown sugar, and vanilla extract, mixing until smooth. Stir in the grated zucchini until well incorporated.
  • Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. The batter should be thick and slightly lumpy. If using, gently fold in the walnuts and raisins.
  • Spoon the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Common questions

Do I need to peel the zucchini before grating?

No — leave the skin on. It softens completely during baking and you won’t see or taste it in the finished loaf. Peeling just adds an extra step with no real benefit.

Can I make this into muffins instead of a loaf?

Yes. Fill a standard 12-cup muffin tin about two-thirds full and bake at the same temperature for 20 to 25 minutes, checking with a toothpick at the 20-minute mark. This is a good option when you’re feeding a group since muffins are easier to serve and portion than sliced bread.

Can I reduce the sugar?

You can cut the total sugar by up to a quarter cup without significantly affecting the texture. Cutting more than that will make the loaf noticeably drier, since sugar contributes to moisture retention in quick breads, not just sweetness.
