Most people like pie, right? The warm gooey filling is what some people yearn for, while others, not so much, which is why these Blueberry Pie Bars are a great alternative to the old school pie! There are so many flavours, apple, cherry, blueberry, peach; the list is endless.


But just like a pie, you can fill them with virtually anything, apples, raspberries, chocolate chips and peanut butter, you name it.
I personally love using blueberries! These Blueberry Pie Bars are pretty amazing.


They’ve become my go-to dessert if I want something sweet; it’s become a bit ridiculous. But I can’t resist. They are soft, chewy, the perfect blend of sweet and sour.


Don’t believe me? Well, then try them for yourself, but be wary because once you do, there is no turning back!

Blueberry Pie Bars

Serves: 8 people
Cooking time: 60 minutes
Level: Novice

Ingredients

  • Crust Ingredients
  • 1 ½ cups of all-purpose flour
  • ¾ cup of sugar
  • Pinch of salt
  • ¾ cup of unsalted butter, cold
  • Filling Instructions
  • 2 large eggs
  • 3/4 cup of brown sugar
  • ½ cup of Greek yogurt
  • 6 tablespoons of all-purpose flour
  • Pinch of salt
  • Juice of half a lemon
  • 1 teaspoon of vanilla extract
  • 15-16 ounces of blueberries, fresh or frozen (thawed and drained of excess juices)

Instructions

Crust Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a 9 x 9-inch baking pan with a sheet of parchment paper (baking paper, wax paper, etc.) and grease lightly. 
  2. In the bowl, combine the flour, sugar, and salt, whisk to blend. Cut the butter into cubes, then add to the bowl to mix with the dry ingredients. You can use a food processor in short pulses until only small pieces of butter remain and the mixture is crumbly. 
  3. Of the soon to be crust, keep about ¾ cup of the mixture for topping the bars. 
  4. Add the mixture to the prepared pan and press firmly to form an even layer of crust on the bottom of the pan. Bake for 12-15 minutes until they become light golden. Let cool 10-15 minutes before proceeding.

Filling Instructions

  1. In a medium bowl, combine the eggs, sugar, yogurt, flour, salt, lemon juice and vanilla. Whisk until smooth, then add in the blueberries. When the crust is ready and set, pour the filling mixture over the crust in the baking pan.
  2. Sprinkle the reserved topping mixture over the filling evenly.
  3. Bake until the top starts to turn golden brown, and the bars are just set for about 30 to 45 minutes. Let cool completely on a wire rack. You can put them in the fridge to firm up before serving.
