These are straightforward cut-out sugar cookies with a soft, tender center and just enough structure to hold a clean shape. The dough comes together from pantry staples — butter, sugar, flour, egg, and vanilla — in about 25 minutes, plus a chill. If you want a reliable batch you can decorate or eat plain, this is the recipe to bookmark.

Smart swaps

  • Butter: Unsalted butter is called for so you control the salt level. If you only have salted butter, reduce the added salt to a small pinch.
  • Vanilla extract: Pure vanilla extract gives a cleaner flavor than imitation. If you’re out, vanilla bean paste works 1:1. Almond extract is a popular swap — use half the amount, since it’s stronger.
  • All-purpose flour: Nothing unusual here, but measure by spooning into the cup and leveling off. Scooping directly from the bag packs in extra flour and makes the dough stiff.

The technique that matters

The two steps that most affect your results are creaming and chilling. Creaming the butter and sugar for a full 3–4 minutes — not just until combined — builds in air that keeps the cookies from turning dense. The mixture should look noticeably lighter in color before you add the egg. Chilling matters just as much: cold dough holds its cut shape in the oven. If you skip it or cut it short, the cookies spread and lose their edges. One hour is the minimum; the dough can go overnight if that works better for your schedule.

Common problems and fixes

  • Cookies spread too much: The butter was too warm when you started, or the dough wasn’t chilled long enough. Next time, make sure butter is softened but still cool to the touch — it should hold a thumbprint without being greasy. Re-chill the cut shapes for 10 minutes on the baking sheet before they go in the oven if your kitchen is warm.

  • Uneven thickness: Roll between two sheets of parchment paper. It keeps the dough from sticking and naturally guides you toward an even thickness without needing to eyeball it.

Make-ahead notes

The dough keeps in the refrigerator, wrapped tightly, for up to 2 days — just let it sit out for a few minutes before rolling. For longer storage, freeze the dough discs for up to 3 months; thaw overnight in the fridge before use. You can also freeze already-baked, undecorated cookies in a single layer, then stack them with parchment between layers once frozen solid. They keep well for up to 2 months and thaw at room temperature in about 30 minutes. If you plan to decorate with royal icing, make sure the cookies are completely cool and fully thawed before you start — any residual warmth will cause the icing to slide.

  • Cream the Butter and Sugar: In a large bowl, use a stand or hand mixer to beat 1 cup of softened unsalted butter with 1 cup of granulated sugar until pale and fluffy, about 3–4 minutes. The mixture should be light and creamy.
  • Add Egg and Vanilla: Beat in 1 large egg and 1.5 teaspoons of vanilla extract until fully incorporated. Scrape down the sides of the bowl as needed.
  • Incorporate Dry Ingredients: In a separate bowl, whisk together 2.75 cups of sifted all-purpose flour, 0.5 teaspoon of baking powder, and 0.25 teaspoon of salt. Gradually add the dry ingredients to the wet mixture in three additions, mixing until just combined. Do not overmix—this helps maintain tenderness.
  • Chill the Dough: Divide the dough in half, shape into discs, and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour. This ensures the dough is easier to roll and helps maintain shape while baking.
  • Preheat and Roll: Preheat the oven to 350°F (175°C). Line baking sheets with parchment. Roll out one chilled disc on a lightly floured surface to about 1/4-inch thickness. Cut into shapes using cookie cutters.

Can I make these without a stand mixer?

Yes, a hand mixer works just as well. If you don’t have either, you can cream the butter and sugar by hand with a wooden spoon, but it takes real effort — plan for 6–8 minutes of vigorous mixing to get the mixture light enough.

Do I have to use cookie cutters, or can I just slice the dough?
