This is a straightforward almond biscotti — twice-baked, genuinely crispy, and made from pantry staples in about 80 minutes. The honest reason to make it: a batch keeps for weeks, so one afternoon of baking covers you for morning coffee, a cookie plate, or a last-minute gift for a while. No special equipment, no fussy ingredients.

The short version of why this works

Two things actually matter here. First, beating the eggs and sugar together for a full 2–3 minutes until pale and thick — this builds just enough structure so the logs hold their shape during the first bake instead of spreading flat. Second, the temperature drop for the second bake (from 350°F down to 325°F) is what dries the slices out slowly and evenly without scorching the cut edges. Rush either step and you get soft centers or burnt tips. Get both right and the texture takes care of itself.

Troubleshooting

  • Logs spread too wide during the first bake: The dough was probably too warm. If your kitchen is hot or you handled the dough a lot, refrigerate the shaped logs for 15 minutes before putting them in the oven.
  • Biscotti are still soft after the second bake: Ovens vary. If they flex instead of snap when cool, put them back on the baking sheet and give them another 5–8 minutes at 325°F. They firm up more as they cool, so wait the full cooling time before judging.
  • Slices crumble or fall apart when cutting: The logs weren’t cool enough. Ten minutes is the minimum rest time; 15 is safer. A sharp serrated knife and one firm downward press — not a sawing motion — also makes a cleaner cut.
  • Almonds burn or taste bitter: If you’re toasting raw almonds yourself, pull them at the first sign of color and smell — they keep cooking off the heat. Pre-toasted almonds from a bag work fine and skip this risk entirely.
  • Biscotti taste flat or one-dimensional: Check that both extracts went in. The almond extract is easy to skip by accident, and it does most of the flavor work alongside the toasted nuts.

Storage and reheating

Once fully cooled, store biscotti in an airtight container at room temperature — they stay crisp for up to three weeks, which is the main reason to make them ahead. Skip the fridge; the humidity softens them faster than leaving them out. For longer storage, freeze them in a zip-lock bag with the air pressed out for up to three months. Thaw at room temperature for an hour or lay them on a baking sheet at 300°F for about 8 minutes to bring back the snap. One note: freeze them after the second bake is fully done and they’re completely cool — freezing underbaked biscotti just locks in the softness.

  • 2 cups all-purpose flour use unbleached for best texture
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup granulated white sugar organic if possible
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract pure vanilla recommended
  • ½ teaspoon almond extract adds depth of flavor
  • 1 cup whole almonds toasted and coarsely chopped

Instructions
 

  • Preheat the Oven: to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  • Mix Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  • Whip Eggs and Sugar: In a separate large mixing bowl, whisk together the sugar and eggs vigorously for 2–3 minutes, or until the mixture becomes pale and thick. Add the vanilla and almond extracts and mix until combined.
  • Combine the Mixtures: Gradually fold the dry ingredients into the egg mixture using a spatula, being careful not to deflate the eggs. The dough will be thick and sticky. Once mostly incorporated, fold in the chopped toasted almonds.
  • Shape the Dough: With dampened hands, divide the dough and shape into two logs approximately 10 inches long and 2 inches wide. Space them apart on the prepared baking sheet as they will spread slightly.
  • First Bake: Bake the logs for 25–30 minutes, or until the tops are lightly golden and firm to the touch. Remove from oven and allow to cool for 10–15 minutes on the baking sheet.
  • Slicing: Reduce the oven temperature to 325°F (160°C). Once cool enough to handle, use a serrated knife to slice the logs diagonally into 3/4-inch pieces.
  • Second Bake: Arrange the slices cut-side down on the baking sheet and return to the oven. Bake for 10 minutes, flip each piece, and bake for another 10 minutes or until dry and lightly crisped. Transfer to a cooling rack to cool completely.

Can I make the dough ahead and bake it the next day?

Yes — wrap the shaped logs tightly in plastic wrap and refrigerate overnight, then bake straight from the fridge, adding 2–3 minutes to the first bake time. The cold dough actually holds its shape a little better going into the oven.

Can I use slivered or sliced almonds instead of whole ones?

You can, but the texture changes noticeably — whole almonds that are coarsely chopped give you irregular chunks that add crunch, while slivered almonds tend to disappear into the dough. If whole almonds aren’t available, roughly chopped roasted almonds from a bag are the closest substitute.
