These are straightforward fudgy brownies made with cocoa powder and bittersweet chocolate chunks — dense in the middle, with that thin crackly top that makes them worth cutting into before they’ve fully cooled. The whole batch takes 45 minutes and uses one saucepan and one bowl. If you need something reliably good that kids and adults both eat without complaint, this is it.

The technique that matters

Two things make or break this recipe. First, let the butter-sugar mixture cool for a few minutes before adding the eggs — if it’s too hot, you’ll scramble them and end up with grainy batter. Warm is fine; steaming is not. Second, fold the dry ingredients in gently and stop as soon as the flour disappears. Overmixing develops gluten and turns fudgy brownies into something closer to chocolate cake. Neither step is difficult, but skipping either one will cost you the texture you’re after.

Instructions

  • In a medium saucepan over medium-low heat, melt the butter just until liquid. Remove from heat and immediately stir in granulated sugar and brown sugar. The mixture should appear glossy and slightly thickened.
  • Allow the butter-sugar mixture to cool slightly before whisking in the eggs, one at a time, followed by the vanilla extract. Whisk vigorously until the mixture is smooth and crackly on top.
  • Using a spatula, gently fold in the sifted cocoa powder, flour, and salt until no dry streaks remain. Do not overmix.
