This is a classic molten chocolate cake — four individual cakes, each with a set outer shell and a fully liquid center, made from six everyday ingredients in under 30 minutes. The reason to make it is simple: it looks far more impressive than the effort involved, and it scales up cleanly when you’re feeding a group.

What makes this version work

Two things actually determine whether you get a molten center or an overcooked puck. First, using both whole eggs and extra yolks — the yolks add fat, which keeps the center rich and slow to set. Second, the cocoa-dusted ramekins. Butter alone can cause the cake to stick and tear on the way out; cocoa powder creates a dry, even release surface so the cake inverts cleanly every time. Get those two things right and the rest follows.

Mistakes to avoid

  • Skipping the oven preheat: The oven must be fully up to 425°F before the ramekins go in. A partially heated oven throws off the timing and you lose the narrow window between set edges and a liquid center.
  • Using cold batter straight from the fridge: If you prepped the batter ahead and refrigerated it, add 1–2 minutes to the bake time. Cold batter bakes unevenly and the center may stay too thick to flow.
  • Overfilling the ramekins: Fill each ramekin no more than three-quarters full. Overfilling causes the batter to rise over the rim and the center never gets the heat it needs to set the edges properly.
  • Waiting too long to serve: Residual heat keeps cooking the cake after it comes out of the oven. More than two minutes of resting and the center starts to firm up. Have your plates ready before the cakes come out.
  • Using low-quality chocolate: This recipe has nowhere to hide off-flavors. A chocolate you’d eat on its own — 60–70% cacao — is worth it here. Baking chips with stabilizers won’t melt as smoothly.

Smart swaps

Bittersweet chocolate at 60–70% cacao is the target — Ghirardelli baking bars work well and are easy to find. If you only have semisweet chips, they’ll melt but the center will be sweeter and slightly less fluid, so reduce the sugar by a teaspoon. Unsalted butter is specified so you control the salt level; if salted butter is all you have, skip the pinch of kosher salt in the batter. Skip the garnish — a dusting of powdered sugar is not worth the extra dish when the cake itself is the whole point.

Keeping and reheating

Unbaked batter in filled, covered ramekins keeps in the fridge for up to 24 hours — this is the most practical make-ahead move when you’re cooking for guests. Baked cakes don’t store well; the molten center firms up completely within an hour and reheating can’t fully restore it. If you do have leftovers, microwave a baked cake on 50% power for 20–30 seconds — it won’t be molten, but it’s still a good dense chocolate cake. Freeze unbaked, filled ramekins (tightly wrapped) for up to one month; bake from frozen at 425°F for 14–15 minutes.

  • 4 oz bittersweet chocolate (60–70% cacao) high-quality chocolate like Valrhona or Ghirardelli
  • ½ cup unsalted butter plus extra for greasing ramekins
  • 2 tablespoons all-purpose flour sifted
  • 2 tablespoons unsweetened cocoa powder for dusting ramekins
  • 2 large eggs room temperature
  • 2 large egg yolks room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 pinch kosher salt

Instructions
 

  • Preheat your oven to 425°F (220°C). Generously butter four 4-ounce ramekins using a pastry brush. Dust the insides with cocoa powder, tapping out the excess. Place the ramekins on a baking sheet and set aside.
  • Melt the chocolate and butter together in a double boiler over simmering water. Alternatively, microwave in a heatproof bowl at 50% power in 30-second intervals, stirring until smooth. Let cool slightly for 5 minutes.
  • In a mixing bowl, whisk together the eggs, egg yolks, granulated sugar, vanilla extract, and salt until pale and slightly thickened—about 2–3 minutes by hand or 1 minute with an electric mixer on medium speed.
  • Gradually whisk the melted chocolate mixture into the egg mixture until smooth. Sift the flour over the mixture and gently fold it in using a spatula. Be careful not to overmix.
  • Divide the batter evenly among the prepared ramekins. Bake for 11–12 minutes. The edges should be set but the center will still look soft.
  • Remove from oven and let rest for 1 minute. Run a knife around the edge to loosen, then invert each ramekin onto a serving plate. Serve immediately.
