This is a classic French chocolate mousse made with 70% cacao chocolate, egg whites, and whipped cream — no shortcuts, no gelatin, no instant pudding. It takes about 35 minutes of active work and needs at least two hours in the fridge, which makes it one of the better desserts to prep ahead before a dinner where you’d rather not be in the kitchen at the end of the night.

The short version of why this works

Two things actually matter here. First, tempering the egg yolks — streaming a little warm melted chocolate into them before adding them to the rest — keeps them from scrambling and gives the mousse a smooth, rich base instead of a grainy one. Second, folding rather than stirring the egg whites in. The air beaten into those whites is the only thing giving the mousse its lift. Fold too hard or too long and you end up with something dense and flat. Use a wide rubber spatula, work in two additions, and stop as soon as the white streaks disappear.

Ingredient notes

  • Chocolate: The recipe calls for 70% cacao bittersweet chocolate. This is worth paying attention to — anything lower and the mousse tastes sweet rather than chocolatey. Valrhona and Guittard are reliable choices, but any good 70% bar from the baking aisle works. Avoid chocolate chips; they contain stabilizers that affect how the chocolate melts.
  • Cream of tartar: Listed as optional, but if your egg whites have any trace of yolk or your bowl isn’t completely dry, it helps them hold their structure. Worth using.
  • Superfine sugar: Regular granulated sugar works fine. Superfine just dissolves a little faster into the whites. Skip the specialty store trip — skip the garnish too, not worth the extra dish.
  • Heavy cream: Use full-fat. It needs to whip to soft peaks, and lower-fat cream won’t get there reliably.

Make-ahead notes

This mousse is genuinely better made ahead. After spooning it into glasses or ramekins, cover each one loosely with plastic wrap and refrigerate. It sets properly after 2 hours, but 4 to 6 hours gives a firmer texture and a slightly deeper chocolate flavor. It keeps well in the fridge for up to 3 days — after that the texture starts to weep a little. Freezing is not recommended; the egg white structure breaks down when thawed and the mousse turns grainy. If you’re making it for a dinner party, the night before is the sweet spot.

Mistakes to avoid

  • Chocolate that seizes: Even a small amount of water in the bowl or on your spatula can cause melted chocolate to seize into a stiff, grainy paste. Make sure every piece of equipment that touches the chocolate is completely dry before you start.
  • Overwhipped cream: Soft peaks means the cream holds a gentle curve when you lift the whisk — not stiff peaks. If you take it too far, it starts to turn buttery and won’t fold in smoothly. When in doubt, stop early; you can always give it one or two more strokes by hand.
  • Warm chocolate added too fast to yolks: Even with tempering, if you pour the chocolate in too quickly the yolks can cook unevenly. Add it in a slow, thin stream while whisking constantly.
  • Deflated whites from a greasy bowl: Egg whites won’t whip properly in a bowl with any fat residue. Wash your bowl with hot soapy water and dry it thoroughly, especially if it’s been used for anything creamy or oily recently.
  • Skipping the chill time: The mousse looks set after an hour but it isn’t — it will be too soft to hold its shape when served. Give it the full 2 hours minimum.

Ingredients
 
 

  • 7 oz bittersweet chocolate (70% cacao) finely chopped; Valrhona or Guittard recommended
  • 3 tbsp unsalted butter cut into cubes, room temperature
  • 4 large eggs separated into yolks and whites, room temperature
  • ¼ tsp cream of tartar optional, helps stabilize egg whites
  • ¼ cup granulated sugar superfine preferred
  • ½ cup heavy cream chilled
  • 1 tsp pure vanilla extract

Instructions
 

  • Begin by melting the chopped chocolate and butter together in a double boiler or a heatproof bowl set over simmering water. Stir gently until smooth and glossy. Remove from heat and let it cool slightly.
  • In a separate bowl, whisk the egg yolks with the vanilla extract. Slowly stream in a few tablespoons of the melted chocolate to temper the eggs, then fold the mixture back into the remaining chocolate. Set aside.
  • In a clean, dry bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the sugar and continue to beat until glossy stiff peaks are achieved. The meringue should hold its shape when the whisk is lifted.
  • In another chilled bowl, whip the heavy cream until it reaches soft peaks. Do not overwhip.
  • Fold the whipped cream into the chocolate mixture using a rubber spatula. Then gently fold in the meringue in two additions, being careful not to deflate the air pockets.
  • Spoon the mousse into serving glasses or ramekins. Smooth the tops and refrigerate for at least 2 hours to set.

Notes

  • Use the freshest eggs possible, especially as they are consumed raw in this preparation. For food safety, use pasteurized eggs if desired.
  • To add complexity, stir a tablespoon of espresso into the melted chocolate for depth, or a splash of dark rum or Grand Marnier for adult flair.
  • For a dairy-free version, use coconut cream in place of heavy cream and avocado oil-based chocolate for melting.

Can I use milk chocolate instead of 70% bittersweet?

You can, but the result will be noticeably sweeter and less chocolatey. If you go that route, reduce the granulated sugar by half so the mousse doesn’t tip into cloying.

Is it safe to eat the raw eggs in this recipe?

The egg yolks are tempered with warm chocolate, which raises their temperature somewhat, but this recipe does use raw egg whites. If you’re serving anyone who is pregnant, elderly, very young, or immunocompromised, use pasteurized eggs, which are available at most grocery stores.

My mousse came out dense and heavy — what went wrong?

Most likely the egg whites were over-folded or partially deflated. Dense mousse is almost always a folding problem rather than a whipping problem. Next time, fold in the whites in two additions and stop the moment you no longer see white streaks.

Can I make this without a double boiler?

Yes. Set a heatproof bowl over a saucepan with about an inch of barely simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir the chocolate and butter gently and pull it off the heat as soon as it’s smooth — residual heat will finish the job.

How far in advance can I make this for a dinner party?

Up to 24 hours ahead is ideal. The mousse holds well for up to 3 days in the fridge, but making it the night before gives you the best texture without any risk of it sitting too long.

Can I double the recipe for a larger group?

Yes, it scales up well. The main thing to watch is that you don’t try to whip double the egg whites or cream in a bowl that’s too small — you need room for the volume to expand, so use your largest bowl.
