These blondies are a one-bowl bar cookie built on melted butter and brown sugar, with butterscotch and semi-sweet chocolate chips folded through. The honest reason to make them: 10 minutes of prep, 25 minutes in the oven, and you get 12 bars that are genuinely chewy rather than cakey. No mixer, no chilling, no second pan.

The technique that matters

Two things determine whether blondies come out chewy or cakey, and both happen before the batter hits the pan. First, use melted butter — not softened, not creamed. Melted butter doesn’t incorporate air the way creamed butter does, so the bars stay dense and fudgy instead of rising into a soft cake texture. Second, stir the butter and sugars together until the mixture is smooth, then add the eggs and stir vigorously for about a minute. That brief, energetic mixing dissolves the sugar more fully and builds just enough structure to hold the bars together without making them tough. After the eggs go in, switch to folding — the moment flour enters the bowl, overworking the batter is the main thing to avoid.

Shopping notes

  • Butterscotch chips: Most large grocery stores carry them in the baking aisle near the chocolate chips. Nestlé Toll House is the most widely available brand. If you can only find them online, they keep well in a sealed bag for months, so it’s worth ordering ahead.
  • Light brown sugar: The recipe calls for light, not dark. Dark brown sugar has more molasses and will make the bars taste more intensely of toffee — not wrong, but noticeably different. Stick with light if you want the butterscotch flavor to come through clearly.
  • Egg white: You only need one egg white, so crack a second egg, use the white, and either save the yolk for scrambled eggs or discard it. Skip the carton egg whites here — the small volume makes measuring them accurately more trouble than it’s worth.

Troubleshooting

  • Bars are greasy on the bottom: This usually means the butter was still hot when you added the sugars. Hot butter can separate back out during baking and pool at the base. Let melted butter sit for at least 5 minutes — it should feel warm, not hot, to the touch.
  • Chips sank to the bottom: The batter was probably too warm when you folded them in, or the chips were stirred in too early. Make sure the butter-sugar mixture has cooled slightly before adding eggs, and fold chips in as the very last step.
  • Bars stuck to the pan: Parchment is the reliable fix here — skip the cooking spray and flour method if you’ve had sticking problems before. A parchment sling (two overlapping strips, leaving overhang on all four sides) lets you lift the whole slab out cleanly.
  • Edges are done but the center looks wet at 25 minutes: Pull them anyway if a toothpick comes out with moist crumbs rather than wet batter. Blondies firm up considerably as they cool; cutting into them too early is the most common reason they seem underbaked.
  • Bars turned out flat and dense rather than chewy: Likely the brown sugar wasn’t packed. Loose brown sugar measures short, which throws off the sugar-to-flour ratio and can result in bars that spread too thin and lose their chew.

Keeping and reheating

Store cut bars in an airtight container at room temperature for up to 4 days — they actually improve slightly on day two once the texture settles. For longer storage, wrap individual bars in plastic wrap and freeze them in a zip-lock bag for up to 2 months. Thaw at room temperature for about an hour. If you want them warm, 10 seconds in the microwave is enough; go longer and the chips get too hot and the edges dry out. Refrigerating is fine but not necessary, and cold blondies lose some of their chew until they come back to room temperature.

Ingredients
 
 

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 stick unsalted butter melted and cooled
  • 1 cup brown sugar packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 large egg white
  • 2 teaspoons vanilla extract
  • ¼ cup butterscotch chips
  • ¼ cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350°F / 175°C (180°C fan-forced). Line a 13x9 inch (33x23cm) baking pan with parchment paper, or grease with cooking spray and dust lightly with flour.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, stir the melted butter, brown sugar, and granulated sugar together until smooth and well combined.
  • Add the egg, egg white, and vanilla extract. Stir vigorously until the mixture is smooth and slightly lighter in colour, about 1 minute.
  • Gradually add the flour mixture to the wet ingredients, folding with a spatula until just combined — do not overmix or the blondies will be tough.
  • Fold the butterscotch chips and chocolate chips into the batter. Spread the dough evenly into the prepared pan using an offset spatula or the back of a spoon.
  • Bake for 22–25 minutes, or until the top is golden brown and a toothpick inserted in the centre comes out with a few moist crumbs (not wet batter).
  • Let the blondies cool in the pan on a cooling rack for at least 30 minutes before slicing into 12 bars.

Can I use a different pan size?

A 9×13-inch pan is strongly recommended for this recipe. A smaller pan, like an 8×8, will give you bars that are too thick to bake through evenly at this temperature and time — the edges will be done while the center is still raw.
