These are yeast-raised, ring-shaped doughnuts fried in oil and dipped in a thin vanilla glaze — the kind you’d find at a classic American doughnut shop. The recipe makes 12, takes about 2.5 hours start to finish, and the results are light, airy, and genuinely worth the effort. If you’ve ever wanted to make a big batch for a weekend crowd without buying a box, this is the recipe to keep.

The short version of why this works

Two things matter most here. First, the yeast bloom: warming the milk to 105–110°F (not hotter) and letting the yeast sit until it’s visibly foamy tells you the leavening is alive before you build the whole dough around it. Skip that confirmation and you risk a flat, dense batch with no way to recover. Second, oil temperature control during frying is what separates a properly cooked doughnut from a greasy one. At 350°F the outside sets quickly while the inside finishes cooking through — drop below that and the dough absorbs oil before it can form a crust. A candy thermometer isn’t optional here; it’s the difference between a good batch and a disappointing one.

Mistakes to avoid

  • Cutting the second rise short. After you cut the doughnuts, they need a full 30 minutes to puff up again. If you rush this step, the doughnuts won’t have enough air in them and they’ll fry up dense. They should look noticeably pillowy before they go in the oil.
  • Overcrowding the pot. Frying more than 2–3 doughnuts at once drops the oil temperature fast. When the temp falls, the dough soaks up oil instead of crisping. Work in small batches and let the oil come back to 350°F between each one — this matters even more when you’re doubling the recipe for a crowd.
  • Glazing cold doughnuts. The glaze sets best when the doughnuts are still warm. If they’ve cooled completely, the glaze sits on the surface instead of bonding to it, and you get a thick, uneven coating that slides off. Glaze within 5 minutes of draining.
  • Flouring the dough cutter but not the surface. If your work surface isn’t well-floured, the cut doughnuts will stick and distort when you try to lift them. Use a bench scraper or thin spatula to transfer them cleanly to the parchment tray — skip the garnish on the doughnut holes too, not worth the extra dish.

  • 1 qt neutral oil for frying such as canola or vegetable oil

For the Vanilla Glaze:

  • 2 cups powdered sugar sifted
  • ¼ cup whole milk
  • 1 tsp pure vanilla extract

Instructions
 

  • In a mixing bowl, whisk the warm milk and yeast. Let sit for 5–10 minutes, or until foamy—a key indicator your yeast is active.
  • Add sugar, eggs, melted butter, and vanilla extract to the yeast mixture. Stir to combine.
  • Add flour and salt. Using a stand mixer fitted with a dough hook, knead on medium speed for 5–8 minutes, or until the dough is smooth and slightly tacky but not sticky.
  • Transfer dough to a lightly oiled bowl. Cover and let rise in a warm place for 1–1.5 hours, or until doubled in size.
  • Turn risen dough out onto a floured surface. Roll to 1/2-inch thickness. Cut using a floured doughnut cutter. Reroll scraps once if necessary.
  • Place doughnuts on a parchment-lined tray, cover with a clean towel, and let rise 30 minutes, until puffy.
  • Heat oil in a large pot to 350°F (175°C). Fry doughnuts in batches, 45–60 seconds per side, or until golden brown. Remove with slotted spoon and drain on a rack.
  • For Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Dip warm doughnuts into glaze, allow excess to drip off, then rest on the rack until set.
