It takes about 20 minutes to put together and just over an hour start to finish, which makes it realistic on a weeknight. The honest reason to make it is that it reheats well, serves six, and tastes better the next day once the juices have settled.

The technique that matters

Two things decide whether this crisp succeeds or disappoints. First, slice the apples thin and evenly — roughly ¼ inch. Thick uneven slices mean some pieces stay firm and starchy while others turn to mush, and you can’t fix that after baking. Second, keep the butter cold when you work it into the oat topping. Cold butter creates distinct crumbs that hold their shape in the oven; if the butter softens before baking, the topping melts into a dense, greasy layer instead of a crunchy crust.
