This is a single-layer chocolate chip cookie baked in a 9-inch round pan and cut into 12 slices — no stacking, no crumb-coating, no stress. It takes 45 minutes start to finish, which makes it a realistic option even on a busy day. If you need a crowd-pleasing dessert that travels well and pleases almost everyone, this is a smart call.

What makes this version work

Two things matter most here. First, the ratio of brown sugar to granulated sugar leans heavily toward brown — a full cup versus half a cup. Brown sugar holds more moisture, which is what gives the center that soft, almost fudgy texture even after the cookie cools completely. Second, pulling the pan at 23–25 minutes when the middle still looks slightly underdone is not a mistake; it’s the whole point. The residual heat from the pan finishes the job. Overbake by even five minutes and you lose that soft center entirely — you’ll end up with something closer to a giant shortbread, which is fine, but it’s not what this recipe is going for.

  • Butter temperature: Softened means it should hold a thumbprint easily but not be greasy or melted at the edges. If yours is too cold, the sugars won’t cream in properly and the texture will be denser than intended.

  • The edges are browning too fast but the center is still raw: Tent the pan loosely with foil for the last 5 minutes of baking. This slows the edge color without trapping steam that would make the top sticky.
  • The dough is crumbly and won’t press flat: Your butter was probably too cold. Press it in as best you can, then let the pan sit at room temperature for 10 minutes before baking — the butter will soften slightly and the dough will level out in the oven.
  • The cookie stuck to the pan: If you skipped the parchment liner, run a thin offset spatula or butter knife around the edge while it’s still warm. Don’t wait until it’s fully cool — it will bond harder as it sets.
  • The center sank after cooling: This usually means the leavening is old. Baking soda loses potency after about 6 months once opened. Test yours by dropping a small amount into hot water — it should bubble immediately.
  • The cookie is dry and crumbly when sliced: It was overbaked, or the flour was over-measured. Next time, spoon flour into the measuring cup and level it off rather than scooping directly from the bag, which compacts it.

Storage and reheating

Store leftover slices in an airtight container at room temperature for up to 3 days — they stay soft. Refrigerating actually dries them out faster, so skip the fridge unless your kitchen is very warm. For longer storage, wrap individual slices tightly in plastic wrap and freeze for up to 2 months. Thaw at room temperature for about an hour. To bring back that fresh-baked softness, microwave a slice for 15–20 seconds; it won’t be identical to day one, but it’s close enough that nobody will complain.

Instructions

  • Add in the eggs one at a time, beating well after each addition. Then mix in the vanilla extract until smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients while mixing on low, being careful not to overmix.
  • Fold in the chocolate chips using a rubber spatula until evenly distributed. The dough will be thick.
  • Press dough evenly into the prepared pan, smoothing the top gently.
  • Bake for 23–25 minutes, or until golden brown around the edges and set in the center. The middle should appear slightly underbaked—it will continue to set as it cools.
