Classic Lemon Meringue Pie From Scratch

This is a full scratch lemon meringue pie — homemade pastry, stovetop lemon filling, and a cornstarch-stabilised meringue — built in three separate stages so nothing feels rushed. It takes about an hour of active work and produces a pie that holds its shape well enough to slice cleanly the next day, which makes it genuinely worth the effort if you’re feeding a crowd or want leftovers sorted ahead of time.

What makes this version work

Two things actually matter here. First, the filling is thickened with cornstarch and cooked long enough — a full three minutes at a boil, then two more minutes after the yolks go in — so it sets firm rather than staying loose and weeping into the crust overnight. Second, the meringue gets a teaspoon of cornstarch beaten in with the egg whites before the sugar is added. That small addition binds the moisture in the whites and dramatically reduces the puddle of liquid that collects under the meringue as the pie cools. Neither step is difficult, but skipping either one is the reason most homemade lemon meringue pies look great coming out of the oven and disappointing by morning.

Shopping notes

  • Lemons: You need about 3–4 for both the juice (½ cup) and zest (1 tablespoon). Bottled lemon juice won’t give you the same brightness — the zest is doing real work in this filling, and you can only get that from fresh fruit.
  • Shortening: The recipe uses a small amount (2 tablespoons) alongside butter in the pastry. Solid vegetable shortening is what you want — not butter-flavoured, not spray. If you’d rather skip it, use all butter, but the crust will be slightly less flaky.
  • Egg separation: You need 3 yolks for the filling and 3 whites for the meringue — conveniently the same eggs. Separate them cold straight from the fridge, then let the whites come to room temperature before whipping.

Storage and reheating

Once fully cooled and set, the pie keeps in the fridge for up to 3 days. Cover it loosely with plastic wrap — pressing wrap directly onto the meringue will pull it apart when you remove it. The meringue will soften slightly by day two, which is normal; the flavour is actually better on day one or two once the filling has fully firmed. This pie does not freeze well: the meringue weeps and the filling turns grainy after thawing. If you want to get ahead, the blind-baked crust can be wrapped and stored at room temperature for up to 2 days, and the filling can be made and refrigerated separately for up to 2 days — just reheat it gently on the stovetop before pouring and topping with freshly made meringue. Skip the garnish — not worth the extra dish.

What can go wrong

  • Filling doesn’t set and stays runny when sliced: The cornstarch was likely undercooked. Make sure the filling reaches a full, gentle boil for the full 3 minutes before you temper the yolks — a simmer isn’t enough to activate the starch properly.
  • Meringue slides off the filling: The filling was too cool when the meringue went on. Spread the meringue onto the filling while it’s still hot from the stovetop — the heat from below helps bond the two layers and prevents separation.
  • Crust shrinks badly during blind baking: The dough wasn’t rested long enough, or it was stretched rather than eased into the pan. Press the dough gently into the corners without pulling it, and don’t skip the 15–20 minute freeze rest before rolling.
  • Meringue weeps a clear liquid after baking: This usually means the sugar wasn’t fully dissolved into the whites. After adding each tablespoon of sugar, beat long enough that you can’t feel any graininess when you rub a little meringue between your fingers.
  • Filling is cloudy or lumpy: The egg yolks were added too fast to the hot mixture and scrambled slightly. Tempering slowly — whisking a ladleful of the hot filling into the yolks first before adding them back to the pot — prevents this entirely.

Pastry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ¾ cup cold butter, cubed
  • 2 tablespoons shortening
  • ½ cup cold water

Filling Ingredients

  • 3 large egg yolks lightly beaten
  • 1 ¼ cups sugar
  • ½ teaspoon salt
  • 6 tablespoons cornstarch
  • 2 cups water
  • ½ cup fresh lemon juice about 3-4 lemons
  • 1 tablespoon lemon zest
  • 3 tablespoons unsalted butter

Meringue Ingredients

  • 3 large egg whites room temperature
  • 6 tablespoons sugar
  • 1 teaspoon cornstarch

Instructions
 

Pastry Instructions

  • To start, blend together flour, salt, and sugar in a food processor. Then add in cold butter and shortening. Combine until the butter is pea-sized. Then add water and mix until the pastry comes together. This shouldn’t take long!
  • Place dough in the freezer to rest for 15-20 minutes.
  • Once chilled, roll out half the dough and leave the rest for another day. Place in a 9-inch pie plate.
  • In a preheated oven at 425°F / 220°C (200°C fan-forced), blind bake the pastry for 15-20 minutes (or until the edges are browned) with beans/weights on top of parchment paper to keep it from puffing up too much.
  • In the last 5 minutes, remove the parchment and weight to let the bottom get some colour.

Filling Instructions

  • In a large pot, add sugar, salt, and cornstarch for the filling. Whisk together. Gradually pour in the water while whisking.
  • Over medium-high heat, bring the mixture to a boil, and boil gently for 3 minutes, whisking constantly. You may consider lowering the heat to medium.
  • Remove from heat; this is when you temper the yolks. Gradually whisk some of the hot mixture into the egg yolks, about half. Once done, add the yolks back to the pot.
  • Return to medium heat and cook for another 2 minutes, whisking all the while, until removing to add in lemon juice, zest, and butter. Let cool for a couple of minutes before pouring into the pie shell.

Meringue Instructions

  • While waiting for the filling to cool slightly, use an electric mixer to beat the egg whites and cornstarch on medium speed until soft peaks form. Then gradually add the sugar, one tablespoon at a time, beating on high speed until you have stiff, glossy peaks. The meringue should hold its shape when you lift the whisk.

Baking Instructions

  • Lower the oven temperature to 350°F / 175°C (160°C fan-forced).
  • Pour filling into pie crust, smooth meringue on top, but keep some peaks.
  • Bake for 12-15 minutes, or until the peaks and edges of the meringue are a nice golden brown. Watch carefully — meringue can go from golden to burnt quickly.
  • Let cool at room temperature for at least 2 hours to allow the filling to set fully, then slice and serve. For cleaner slices, refrigerate for 30 minutes before cutting.

Can I make this pie a day ahead?

Yes — this pie is actually easier to slice cleanly after an overnight rest in the fridge. Make the full pie the day before, cool it at room temperature for at least 2 hours, then refrigerate uncovered until the meringue is dry to the touch before loosely covering.

Why does my lemon filling taste starchy or bland?

The filling wasn’t cooked long enough after the yolks were added. Two full minutes of gentle cooking after the yolks go in is necessary to cook out the raw cornstarch flavour and let the lemon juice and zest come through clearly.
