This is a two-layer dark chocolate cake with a three-ingredient ganache frosting — straightforward to make on a weeknight if you plan ahead, and genuinely impressive for a birthday or celebration. The batter uses oil instead of butter and a cup of hot coffee, which together produce a moist crumb that holds up well for several days. If you want a chocolate cake you can bake on Saturday and still be happy eating on Tuesday, this is it.

Before you start

Two things make or break this cake. First, your eggs and milk need to be at room temperature — cold dairy added to the batter can cause the fat in the oil to seize slightly, leading to uneven mixing and a tighter crumb. Pull them out 30 minutes before you start. Second, the ganache has a narrow window: pour it too hot and it runs off the cake, let it cool too long and it turns stiff and drags. Aim for a consistency where it falls off a spoon in a slow, thick ribbon — roughly 20 to 30 minutes at room temperature after you make it, depending on how warm your kitchen is. Check it every five minutes rather than setting a timer and walking away.

What can go wrong

  • Domed, cracked tops: This usually means the oven is running hot. An oven thermometer is worth having. If the tops dome badly, the layers won’t stack flat — trim them with a serrated knife once fully cooled rather than fighting with the frosting.
  • Ganache that won’t come together smoothly: If the cream was too hot when it hit the chocolate, or you stirred too aggressively, it can look greasy and broken. Add a tablespoon of warm cream and stir slowly from the center outward — it usually comes back.
  • Layers sliding when you frost: The cakes must be completely cold. Even slightly warm layers will melt the ganache and cause the top layer to shift. If you’re in a hurry, 20 minutes in the fridge after they come off the wire rack will do it.
  • Sticky parchment that tears the cake: Grease the parchment rounds as well as the pan sides. The recipe calls for greasing and flouring the pans, but the parchment itself still needs a light coating of oil or butter.
  • Dry edges with a wet center: This happens when the batter isn’t divided evenly between the pans. Use a kitchen scale to split it — each pan should hold roughly the same weight — so both layers bake at the same rate.

Ingredient notes

  • Dutch-process cocoa: This is worth seeking out. It’s less acidic than natural cocoa and produces a darker, smoother flavor. Most grocery stores carry it — look for brands labeled “Dutch-processed” or “alkalized.” Natural cocoa works in a pinch but the flavor will be sharper.
  • Hot brewed coffee: It doesn’t make the cake taste like coffee — it deepens the chocolate flavor. Instant coffee dissolved in hot water works fine if you don’t have brewed on hand. Use about 1 teaspoon of instant per cup of water.
  • Semi-sweet chocolate for the ganache: Bittersweet (60–70% cacao) also works and gives a less sweet finish. Skip the garnish of chocolate shavings or cocoa dusting — not worth the extra dish.
  • Dairy-free option: Swap the whole milk for unsweetened almond or oat milk, and use dairy-free semi-sweet chocolate chips with full-fat coconut cream in place of heavy cream for the ganache. The texture is slightly less glossy but still good.

Leftovers and make-ahead

The frosted cake keeps well at room temperature under a cake dome for up to 2 days — the oil-based crumb actually improves slightly on day two as the moisture evens out. After that, move it to the fridge where it will keep for up to 5 days; let individual slices sit out for 15 minutes before eating so the ganache softens. For longer storage, freeze unfrosted layers individually: wrap each in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge still wrapped, then bring to room temperature before frosting. The ganache can also be made up to a week ahead and stored in the fridge — rewarm it gently in 15-second microwave bursts, stirring between each, until it reaches a spreadable consistency again.

  • 1 ¾ cups all-purpose flour sifted

  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp kosher salt
  • 2 large eggs room temperature
  • 1 cup whole milk room temperature preferred
  • ½ cup neutral oil such as canola or vegetable
  • 2 tsp pure vanilla extract
  • 1 cup hot brewed coffee freshly brewed, enhances chocolate flavor

For the Ganache Frosting:

  • 8 ounces semi-sweet chocolate chopped or chips
  • 1 cup heavy cream heated until just steaming
  • 1 tbsp unsalted butter adds gloss and richness

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper for easy release.
  • In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until fully combined.
  • Add in the eggs, milk, oil, and vanilla extract. Mix on medium speed using a stand mixer or hand mixer for about 2 minutes, until smooth and glossy.
  • Slowly pour in the hot coffee while mixing at low speed. The batter will be thin—this is expected and ensures a moist crumb.
  • Divide the batter evenly between the prepared pans. Tap gently to release any trapped air bubbles.
  • Bake for 30–35 minutes, or until a tester inserted in the center comes out clean. Cool the cakes in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  • For the ganache, place chopped chocolate in a heatproof bowl. Pour over the hot cream and let sit for 2 minutes to melt. Stir gently until smooth, then whisk in the butter until glossy. Cool to a spreadable consistency.
  • Spread half of the ganache between layers, then use the remainder to frost the top and sides. Smooth with an offset spatula for a professional finish.

Common questions

Can I make this as a single-layer cake instead of two layers?

Yes — use a 9×13-inch pan and bake for 35 to 40 minutes, checking with a tester at 35. The ganache quantity in the recipe is generous for two layers, so you’ll have more than enough to frost a single sheet cake thickly.

Do I have to use coffee, or can I substitute something else?
