This is a single-serving chocolate cake that goes from pantry to table in about seven minutes, using one mug and a microwave. No oven, no mixer, no waiting. It uses Dutch-processed cocoa, a pinch of salt, and optional chocolate chips in the center — small details that make a real difference in flavor and texture.

Ingredient notes

  • Dutch-processed cocoa: This is the one ingredient worth seeking out. It’s less bitter and darker than natural cocoa, which gives the cake a richer chocolate flavor. It’s usually labeled “Dutch-process” or “alkalized” on the tin. Natural cocoa works in a pinch but the result will taste slightly sharper.
  • Baking powder: The recipe card flags this clearly — do not swap it for baking soda. They behave differently and baking soda without an acid in the batter will leave a soapy taste.
  • Vegetable oil: Use a neutral oil like canola or grapeseed. Olive oil is too strong here and will compete with the chocolate.
  • Chocolate chips: Technically optional, but skip the garnish of whipped cream or ice cream on top — not worth the extra dish. The chips pressed into the center are the real payoff.

The short version of why this works

Two things matter most here. First, mix the dry ingredients completely before adding any liquid — cocoa powder and baking powder both clump, and an unmixed pocket of either one will leave a bitter or dense spot in the finished cake. Second, stop the microwave on time. The cake should look just barely set on top, not dry. Microwaves cook from the inside out, so the center keeps cooking during that one-minute rest. Pull it too early and it looks underdone; it will firm up. Pull it too late and no amount of resting fixes a rubbery texture.

If something goes sideways

  • The cake is rubbery or tough: It was overcooked. Microwaves vary a lot — next time start checking at 55 seconds. A slightly underdone top is fine; a dry, tight crumb is not recoverable.
  • The batter overflows: Your mug is too small. You need at least a 12-ounce mug with room to spare. The batter rises as it cooks.
  • There are dry floury streaks in the finished cake: The dry ingredients weren’t fully mixed before the liquid went in. Stir the dry mixture until it looks uniform — no visible cocoa streaks — before adding anything wet.
  • The cake tastes flat or bland: Check that your baking powder isn’t expired. Open a new tin if it’s been sitting in the back of the cupboard for over a year. Old baking powder simply doesn’t work.
  • The chocolate chips sank to the bottom instead of staying in the center: They were stirred in rather than folded onto the top of the batter. Spoon the chips on last and press them in gently rather than mixing them through.

Keeping and reheating

Mug cakes are genuinely best eaten right away — the texture softens and gets a little gummy as it sits. That said, if you have leftovers, cover the mug with plastic wrap and refrigerate for up to one day. To reheat, microwave on 50% power for 20 to 30 seconds. Full power will toughen it fast. Freezing is not recommended; the texture doesn’t hold up after thawing.

Instructions
 

  • In a 12-ounce microwave-safe mug, combine flour, cocoa powder, sugar, salt, and baking powder. Mix well with a spoon or mini whisk until thoroughly blended and no lumps remain.
  • Add the milk, vegetable oil, and vanilla extract to the dry ingredients in the mug. Stir thoroughly until you achieve a smooth, glossy batter.
  • If using, fold chocolate chips into the center of the batter to create a gooey, molten effect when cooked.
  • Clean the edges of the mug with a paper towel for cleaner presentation, then microwave on high power for 60–75 seconds (based on a 1000-watt microwave). The top should be just set and spring lightly when touched.
