This vanilla bean milkshake uses three ingredients — ice cream, whole milk, and a real vanilla bean — and comes together in under ten minutes. The vanilla bean is the one ingredient worth buying: it gives the shake a floral, rounded flavor that extract alone doesn’t quite match. If you want a proper thick milkshake without any fuss, this is the recipe to reach for.

What makes this version work

Two things matter here. First, the ratio of ice cream to milk: three cups of ice cream to three-quarters of a cup of milk keeps the shake thick rather than watery. Too much milk and you lose the texture entirely — it becomes a cold glass of flavored milk. Second, blending time. Thirty to forty-five seconds on medium is enough to smooth everything out without melting the ice cream down. Over-blending warms the shake and makes it thin fast. Stop the blender as soon as the mixture looks uniform and frothy.

Substitutions that actually work

  • Vanilla bean: If you can’t find vanilla bean pods, use half a teaspoon of pure vanilla extract. The flavor will be slightly flatter but still good. Vanilla bean paste is an even better substitute — use half a teaspoon and you’ll get the visible seeds too.
  • Whole milk: Oat milk is the most reliable dairy-free swap here. It has enough body to keep the shake from turning watery. Almond milk works but produces a noticeably thinner result.
  • Ice cream: Full-fat vanilla ice cream is the base of this recipe — a lower-fat or “light” version will make the shake icy and less creamy. Stick with full-fat if you can.

Troubleshooting

  • Shake is too thick to pour: The ice cream was probably too frozen. Let it sit on the counter for three to five minutes before scooping, then blend again briefly.
  • Shake turned out watery: The blender ran too long and melted the ice cream. Next time, blend in short pulses and stop earlier than you think you need to.
  • Vanilla seeds clumped together: Scrape the seeds into the milk first and stir briefly before adding the ice cream. This distributes them evenly before blending starts.
  • Shake separated in the glass: This happens when it sits too long before serving. Milkshakes don’t hold — pour and serve immediately.
  • Weak vanilla flavor: The vanilla bean may have been old and dried out. Fresh pods should feel slightly pliable and smell strongly. If yours are brittle, double up on vanilla extract to compensate.

Keeping and reheating

Milkshakes don’t store well — the texture breaks down quickly as the ice cream melts and the mixture separates. If you have leftovers, pour them into a freezer-safe container and freeze for up to two days. To serve again, let the container sit at room temperature for about ten minutes, then re-blend for fifteen to twenty seconds. It won’t be quite as thick as fresh, but it’s close. Skip the garnish on a stored shake — not worth the extra dish when the whipped cream won’t survive the freeze anyway.

For the Milkshake Base:

  • 3 cups vanilla ice cream preferably high-quality or homemade, full-fat
  • ¾ cup whole milk cold, organic if possible
  • 1 pod vanilla bean split and seeds scraped
  • ¼ teaspoon pure vanilla extract optional, for extra depth

For Optional Garnish:

  • ½ cup whipped cream freshly whipped
  • 2 pieces maraschino cherries for topping
  • 2 tablespoons white chocolate curls optional, for a touch of elegance

Instructions
 

  • Using a paring knife, split the vanilla bean lengthwise. Scrape out the seeds using the flat edge of the knife.
  • In a blender, combine the vanilla ice cream, cold whole milk, scraped vanilla bean seeds, and vanilla extract if using.
  • Blend on medium speed for about 30–45 seconds, or until smooth and just frothy. The texture should be thick but sippable through a straw.
  • Pour immediately into chilled tall glasses. Leave a little room at the top if adding whipped cream.
  • Top each shake with a generous dollop of whipped cream, a maraschino cherry, and a sprinkle of white chocolate curls if desired.
