This is a from-scratch banana pudding built on a stovetop vanilla custard — no instant mix, no shortcuts. It takes about 50 minutes of active work, then the fridge does the rest. Make it the night before and it actually tastes better the next day, which makes it one of the most practical desserts you can bring to a gathering or prep ahead for the week.

Why this recipe works

Two things make or break this pudding. First, tempering the egg yolks — adding hot milk to the yolks gradually before they go back into the pan — keeps the eggs from scrambling and gives you a smooth, cohesive custard instead of a lumpy one. Second, pressing plastic wrap directly against the surface of the warm custard stops a rubbery skin from forming while it chills. Skip either step and the texture suffers. Everything else in this recipe is forgiving; those two steps are not.

Troubleshooting

  • Custard is thin after chilling: It probably didn’t cook long enough on the stove. The mixture needs to reach a full, slow bubble — not just steam — for the cornstarch to activate properly. If it’s already assembled and still loose, it will firm up more after 4–6 hours in the fridge, but a severely undercooked custard won’t fully recover.
  • Custard has small lumps: The egg yolks were added too fast or the heat was too high. Push the custard through a fine-mesh strainer before assembly — it fixes the texture completely and takes 30 seconds.
  • Bananas turned brown by the next day: This happens when banana slices are exposed to air at the edges of the dish. Tuck them fully into the custard layer so they’re covered on all sides, and use bananas that are ripe but still firm — very soft bananas break down faster.
  • Wafers are still crunchy after chilling: The pudding needs at least 4 hours in the fridge, and overnight is better. If they’re still firm, the custard layers may be too thin — each custard layer should fully cover the cookies.
  • Whipped cream deflated or turned watery: Heavy cream must be very cold before whipping, and the bowl helps too — chill it in the freezer for 10 minutes first. If you’re making this more than a day ahead, skip the whipped cream — not worth the extra dish — and add a fresh layer right before serving.

Keeping and reheating

Covered tightly with plastic wrap, this pudding keeps well in the fridge for up to 3 days. The flavor actually improves after the first night as the layers meld together, so day two is often the best. By day three the bananas will start to soften further and the wafers will be very tender — still good, just a different texture. Banana pudding does not freeze well; the custard separates and the bananas turn mushy on thawing. If you’re making a large batch to eat across several days, consider assembling individual portions in jars or cups with lids rather than one big dish — they’re easier to grab, seal better, and hold up slightly longer since they’re not being opened and re-covered repeatedly.

Ingredients
 
 

For the Vanilla Custard:

  • 3 cups whole milk preferably organic
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 3 tablespoons cornstarch
  • 4 large egg yolks at room temperature
  • 2 teaspoons pure vanilla extract use real vanilla for best flavor
  • 2 tablespoons unsalted butter cut into cubes

For the Assembly:

  • 5 medium ripe bananas sliced into 1/4” thick rounds
  • 1 box vanilla wafers about 11 oz., such as Nilla brand
  • 1 cup heavy whipping cream very cold, for topping
  • 2 tablespoons powdered sugar optional, to sweeten whipped cream

Instructions
 

  • In a medium saucepan over medium heat (350°F / 175°C), whisk together milk, sugar, salt, and cornstarch. Cook, stirring constantly, until mixture is steaming but not boiling—about 3-5 minutes.
  • In a small bowl, whisk the egg yolks until smooth. Temper by slowly adding 1/2 cup of the hot milk mixture while whisking vigorously to prevent scrambling.
  • Pour egg mixture back into the saucepan and continue to cook over medium heat, stirring constantly until thickened and bubbling—about 5-7 minutes. The custard should coat the back of a spoon.
  • Remove from heat, stir in butter and vanilla extract. Once smooth, pour into a bowl and press plastic wrap directly against the surface to prevent a skin from forming. Let cool for 15 minutes at room temperature, then refrigerate for 30 minutes until slightly chilled.
  • In a 9x13-inch dish or trifle bowl, begin assembling layers: a base of vanilla wafers, followed by a layer of banana slices, and then a layer of custard. Repeat this pattern until all components are used, finishing with custard on top.
  • Whip the cold heavy cream with powdered sugar (if using) until medium peaks form. Spread the whipped cream over the top layer of pudding using a spatula or piping bag for flair.
  • Cover and refrigerate for at least 2 hours to allow the flavors to meld and wafers to soften.

Can I make this a day ahead?

Yes, and it’s actually the recommended approach. The pudding needs at least 4 hours to set properly, and overnight chilling gives the wafers time to soften and the custard time to fully firm up — the texture on day two is noticeably better than day one.

How ripe should the bananas be?

Ripe but still firm — yellow with a few spots is ideal. Very soft or overripe bananas will turn mushy and brown quickly once they’re layered into the custard, especially after a night in the fridge.

Can I use a different cookie instead of vanilla wafers?

Shortbread cookies or ladyfingers both work well as substitutes. Shortbread holds its shape a little longer before softening, while ladyfingers absorb the custard faster and give a more cake-like texture throughout.

My custard started to scramble — can I save it?

If there are only small bits of cooked egg, strain the custard through a fine-mesh sieve immediately and it will be fine. If large curds have formed throughout, the custard is too far gone and it’s worth starting the custard step again — the rest of the ingredients are still usable.
