This strawberry frozen yogurt comes together with four ingredients — fresh strawberries, Greek yogurt, sugar, and lemon juice — plus an optional splash of vodka if you want it scoopable straight from the freezer. It takes about 10 minutes of hands-on work, and the result is tangier and fresher-tasting than anything from a carton. If you have an ice cream maker and ripe strawberries, there’s no reason to make anything else.

Why this recipe works

Two things make this work. First, macerating the strawberries — tossing them with sugar and letting them sit for an hour — draws out their juice through osmosis. That syrup carries the strawberry flavor evenly through the entire base, so you’re not just eating sweetened yogurt with fruit chunks. Second, the Greek yogurt brings enough fat and protein to keep the texture creamy rather than icy, but it also adds a natural tang that keeps the sweetness from going flat. The lemon juice reinforces that brightness. Those two steps — maceration and the right yogurt — are doing most of the work here, and neither one costs you anything extra.

If something goes sideways

  • The base won’t churn into soft-serve — it stays liquid: Your ice cream maker bowl probably wasn’t cold enough. It needs a full 24 hours in the freezer, not just overnight from a warm kitchen. Pour the base back into the fridge and refreeze the bowl completely before trying again.
  • The frozen yogurt tastes bland even with ripe berries: The lemon juice may have been left out or undersized. Add an extra teaspoon to the blended base before churning — it sharpens the strawberry flavor without making it taste citrusy.
  • It froze into a solid block and won’t scoop: This happens without the vodka, especially in colder freezers. Let it sit at room temperature for 10–15 minutes. If you want a longer-term fix, stir a teaspoon of honey into the base next time — honey’s fructose content resists freezing similarly to alcohol.
  • The texture is grainy or icy rather than smooth: The base wasn’t cold enough before churning, or the machine ran too long. Churn just until you hit soft-serve consistency and stop — over-churning breaks down the texture. A warmer base also means larger ice crystals form during freezing.
  • You used low-fat or nonfat Greek yogurt and it tastes thin: Skip the garnish — not worth the extra dish. Instead, focus on the base: stir in a tablespoon of cream cheese before blending to add back some richness without buying a whole new ingredient.

Keeping and reheating

Frozen yogurt keeps well in a shallow, airtight container in the freezer for up to two weeks. Press a piece of plastic wrap directly against the surface before sealing the lid — this prevents ice crystals from forming on top. After about two weeks the texture starts to degrade and it becomes icier, so it’s worth eating sooner rather than saving it. There’s no reheating involved, but if it’s been in the freezer longer than a few days, give it 10–15 minutes on the counter before scooping. It doesn’t keep in the fridge — it’ll just melt into a smoothie.

  • 1 pint fresh strawberries washed, hulled, and sliced
  • ⅔ cup granulated sugar
  • 2 teaspoons vodka optional — helps keep the texture scoopable

Instructions

  • Puree the strawberry mixture in a blender with yogurt, salt, and lemon juice until smooth. Cover with lid and refrigerate for about 1 hour or up to overnight.
  • Pour the chilled base into your ice cream maker and churn according to the manufacturer's directions, typically 20-25 minutes, until it reaches a soft-serve consistency. Serve immediately for a soft, creamy texture, or transfer to a freezer-safe container and freeze for 2-4 hours for a firmer scoop. Can I make this without an ice cream maker?

You can, but the texture will be icier and less creamy. Pour the blended base into a shallow freezer-safe dish, freeze for 45 minutes, then scrape and stir vigorously with a fork. Repeat every 30–45 minutes for 3–4 hours until it reaches a scoopable consistency — this is the no-churn granita method and it works, just with more effort.

Can I use frozen strawberries instead of fresh?

Yes — thaw them completely and drain off the excess liquid before macerating. Frozen strawberries are picked at peak ripeness, so they often have better flavor than out-of-season fresh ones. Just don’t skip the maceration step even with frozen fruit.

What can I use instead of vodka?

A tablespoon of honey or light corn syrup both help keep the texture softer in the freezer, since their sugar composition resists freezing. Neither adds noticeable flavor at that quantity. If you skip the softener entirely, the frozen yogurt will just need more time to soften on the counter before serving.

Can I use regular yogurt instead of Greek yogurt?

Regular yogurt has a much higher water content, which means more ice crystals and a noticeably icier result. If it’s all you have, strain it through a cheesecloth or a fine-mesh strainer lined with a paper towel for 1–2 hours in the fridge first to drain off some of the whey — that gets you closer to Greek yogurt’s consistency.

Can I reduce the sugar?

You can cut it by about a quarter without much impact on texture. Going lower than that affects both sweetness and the maceration — less sugar means less syrup drawn out of the berries, which means less even flavor distribution. If your strawberries are very ripe and sweet, start with half a cup and taste the base before churning.

My strawberries aren’t very ripe — will this still work?

Pale, underripe strawberries will give you a noticeably milder result. To compensate, add an extra tablespoon of sugar during maceration and let them sit the full hour — sometimes longer helps. A teaspoon of strawberry jam stirred into the base before churning also boosts the flavor without requiring better fruit.
