This is a slow cooker gumbo built around shrimp, okra, tomatoes, and bell pepper — no roux, no constant stirring. Arrowroot powder and the okra itself do the thickening work while the slow cooker runs. The honest reason to make it: 15 minutes of prep, then you walk away and come back to a pot that feeds a crowd.

Before you start

The one thing that actually matters here is when you add the shrimp. Shrimp overcook fast, and a slow cooker runs hot enough to turn them rubbery if they go in at the beginning. Add them in the last 20–30 minutes of cook time — they only need to turn pink and opaque. The second thing worth knowing: arrowroot powder loses its thickening power if it boils hard for a long time, so stir it in toward the end of cooking rather than at the start. Both of these steps take under a minute and make a real difference in the finished dish.

If something goes sideways

  • Broth is too thin at the end: Mix 1 teaspoon of arrowroot powder with 1 tablespoon of cold water, stir it into the gumbo, replace the lid, and give it 10–15 more minutes on high. Repeat once if needed.
  • Broth is too thick or pasty: Stir in a splash of low-sodium chicken or seafood broth, a few tablespoons at a time, until it loosens up.
  • Shrimp turned out rubbery: They went in too early or cooked too long. Next time, add them in the final 20–30 minutes. You can’t undo overcooked shrimp, but serving over plenty of hot rice helps mask the texture.
  • It tastes flat or one-dimensional: A squeeze of fresh lemon juice stirred in right before serving wakes the whole pot up. Also check your salt — slow cooker dishes often need a final seasoning adjustment at the end.
  • Okra texture is off or slimy: This is normal if the okra was added whole. Slicing it and cooking it fully actually breaks down the sliminess into the broth, which is what thickens it. If the texture still bothers someone at the table, just fish the pieces out — the flavor and thickness stay behind.

Smart swaps

  • Arrowroot powder: Cornstarch works as a 1:1 substitute. Mix it with cold water before adding, same as arrowroot. Skip the garnish — not worth the extra dish.
  • Okra: Frozen okra works just as well as fresh here and is usually cheaper. No need to thaw it first.
  • Shrimp size: Medium or large both work. Smaller shrimp cook faster, so check them at the 15-minute mark instead of 20.
  • Heat level: If you’re feeding kids or anyone sensitive to spice, start with half the cayenne. You can always pass hot sauce at the table for adults who want more.

Keeping and reheating

Leftovers keep well in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop over medium-low heat, stirring occasionally — high heat can make the shrimp tough and may break down the arrowroot thickening. Add a small splash of broth or water if it’s thickened up too much in the fridge. For freezing, the gumbo base (without shrimp) freezes well for up to 2 months; freeze the shrimp separately or add fresh shrimp when you reheat. Fully assembled gumbo with shrimp can be frozen, but the shrimp texture will soften after thawing.

Cupcake Ingredients

  • 1 ¼ sticks unsalted butter cubed
  • ½ cup bittersweet chocolate chopped
  • ½ cup unsweetened chocolate chopped
  • 3 medium eggs
  • ½ cup turbinado sugar
  • 1 pinch salt
  • ½ cup coconut rum
  • 1 tsp vanilla extract
  • ½ tsp cayenne pepper
  • 1 tsp cinnamon
  • 1 tsp instant espresso powder

Frosting Ingredients

  • ⅓ cup semisweet chocolate chopped
  • 2 tbsp unsalted butter
  • 1 cup granulated sugar
  • 3 medium egg whites
  • 0.3 tsp cream of tartar
  • 2 tsp vanilla extract
  • ⅓ cup water
  • 1 pinch fine sea salt
  • as needed shaved chocolate for topping

Instructions
 

Cupcake Instructions

  • Preheat the oven to 325°F / 160°C (165°C fan-forced).
  • Line the cupcake pan with cupcake papers.
  • Chop the bittersweet and unsweetened chocolate and place in a heatproof bowl set over a saucepan of gently simmering water (double boiler). Add the cayenne pepper and cinnamon. (Tip: flavoured bittersweet chocolate, such as chilli or orange-infused, works beautifully here.)
  • Stir until the chocolate is melted.
  • In another heatproof bowl, put the eggs, turbinado sugar and salt. Place the bowl on the same double boiler and whisk until the mixture is warm for about 2 to 4 minutes.
  • Transfer the egg mixture to a stand mixer fitted with the whisk attachment (or use a hand mixer). Whip on medium speed until the mixture has tripled in volume, about 5 minutes. It should be pale, thick, and leave a ribbon trail when the whisk is lifted.
  • While that is mixing, combine the coconut rum, vanilla, and instant espresso powder in a small saucepan and bring to a low boil.
  • Decrease the speed of the mixer to low and gradually pour in the rum/coffee mixture in a thin, steady stream.
  • Then add the melted chocolate mixture and mix on low speed until fully combined, about 2 minutes. Scrape down the sides of the bowl as needed.
  • Gradually add the butter until all is incorporated.
  • Scoop batter into the cupcake papers.
  • Bake at 325°F / 160°C (165°C fan-forced) for about 10 minutes (for mini cupcakes) and 15 minutes (for regular cupcakes). The cupcakes are done when the tops are set and slightly firm to the touch — they will continue to firm up as they cool.
  • Let cool completely.

Frosting Instructions

  • Melt chocolate and butter in a microwave-safe bowl in 30-second intervals using a microwave-safe bowl until all melted. Set aside to cool slightly.
  • Whisk the egg whites, sugar, cream of tartar, salt and 1/3 cup (80ml) of water in a heatproof bowl.
  • Place bowl over a double boiler beat with a hand mixer on low, then gradually increase speed to form soft peaks. This takes about 5 minutes. The mixture should reach 160°F / 71°C to pasteurise the egg whites.
  • Remove the bowl from the pan and continue beating until the mixture becomes cool and fluffy.
  • Fold in vanilla, then the chocolate.
  • Transfer the frosting to a piping bag fitted with a large round or star tip (or a zip-top bag with one corner snipped off).
  • Pipe the frosting on top of each cupcake.
  • Top with shaved chocolate.

Common questions

Can I use frozen shrimp straight from the bag?

Yes, but thaw them first so they don’t water down the broth or drop the temperature in the slow cooker. Run them under cold water in a colander for about 5 minutes, then pat dry before adding them in the last 20–30 minutes of cooking.

Do I have to use okra, or can I leave it out?

You can leave it out, but the broth will be noticeably thinner since okra does a lot of the natural thickening here. If you skip it, increase the arrowroot powder slightly and expect a brothier result — still tasty, just a different texture.

Is this spicy? Will kids eat it?

At full spice it has a mild-to-medium kick, which some kids handle fine and others don’t. Cut the cayenne in half for a family-friendly version and serve hot sauce on the side for adults — the base flavor is rich and savory without being overwhelming.
