This is a skillet lamb gyro built around a simple marinade and a quick homemade tzatziki — no special equipment, no vertical rotisserie. The lamb is thinly sliced, marinated in olive oil, lemon, garlic, oregano, and cumin, then cooked in a hot grill pan until charred and done in minutes. If you want a satisfying, hands-on dinner that comes together in under two hours (most of that is hands-off marinating), this is a solid weeknight or weekend option.

The short version of why this works

Two things matter here. First, slicing the lamb thin before marinating — not after — means the marinade actually penetrates the meat rather than just coating the surface. Thin slices also cook fast over high heat, which is how you get char on the outside without drying out the inside. Second, squeezing the grated cucumber thoroughly before mixing the tzatziki keeps it thick and creamy instead of watery. A wet tzatziki soaks through the pita and makes the whole wrap fall apart. Press the cucumber in a clean kitchen towel or a few layers of paper towel until almost no liquid comes out — it takes thirty seconds and makes a real difference.

Troubleshooting

  • Lamb is steaming instead of charring: The pan isn’t hot enough, or you added too many slices at once. Crowded meat releases moisture and steams. Work in smaller batches and let the pan come back up to heat between each one.
  • Marinade tastes flat: Dried oregano varies a lot in potency. If yours has been sitting in the cabinet for more than a year, use a little more than the recipe calls for, or rub it between your fingers before adding to wake up the oils.
  • Pita tears when you wrap it: It’s too cold or too dry. Warm it until it’s genuinely pliable — a dry pan over medium heat for 30–45 seconds per side works better than the oven if you’re only doing a few pieces.
  • Tzatziki is too sharp or garlicky: Raw garlic intensifies as it sits. If you’re making tzatziki more than a couple of hours ahead, use half the garlic called for, or stir it in closer to serving time.
  • Lamb is tough or chewy: Boneless leg of lamb has some connective tissue. Make sure your slices are genuinely thin — aim for about a quarter inch. Thicker cuts won’t tenderize in a short marinade and won’t cook through quickly enough to stay juicy.

Keeping and reheating

Store the cooked lamb and tzatziki separately in the fridge — the lamb keeps well for up to three days, the tzatziki for two to three days (give it a stir before serving since it can separate slightly). Skip the garnish vegetables; slice fresh ones when you’re ready to eat, since leftover tomatoes and lettuce go soggy fast — not worth the extra container. To reheat the lamb, a hot dry skillet for one to two minutes works better than the microwave, which makes it rubbery. The lamb also freezes fine for up to two months; thaw overnight in the fridge. Tzatziki does not freeze well — the yogurt breaks and the texture turns grainy.

Lamb Marinade

  • 1.5 pounds boneless leg of lamb trimmed and thinly sliced
  • ¼ cup extra virgin olive oil plus more for grilling
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 4 cloves garlic minced
  • 2 teaspoons dried oregano preferably Greek oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon fresh ground black pepper

Tzatziki Sauce

  • 1 cup plain Greek yogurt full-fat preferred
  • ½ cup cucumber grated and squeezed of excess water
  • 1 clove garlic grated
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • ¼ teaspoon salt or to taste

Assembly

  • 4 pieces pita bread warm and soft, preferably Greek-style
  • 1 cup cherry tomatoes halved
  • ½ cup red onion sliced thin
  • ½ cup romaine lettuce shredded

Instructions
 

  • In a large mixing bowl, combine olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add lamb slices and toss to coat well. Cover and marinate for at least 1 hour in the refrigerator (or overnight for deeper flavor).
  • To make the tzatziki, mix yogurt, grated cucumber, garlic, dill, lemon juice, olive oil, and salt in a bowl. Stir until well blended. Chill covered for at least 30 minutes.
  • Heat a grill pan or skillet over medium-high heat. Drizzle with olive oil. Grill lamb slices in batches for 2–3 minutes per side or until charred and cooked through. Set aside to rest slightly.
  • Warm pita bread in a dry pan or wrapped in foil in a 350°F (175°C) oven for 5 minutes. Lay out each pita and spoon lamb down the center followed by a dollop of tzatziki, tomatoes, onions, and romaine.
  • Wrap in parchment or foil for ease of eating, or enjoy open-faced on a beautiful platter.

For a leaner option, substitute chicken thighs and adjust cooking time accordingly. To enhance the char flavor, sear the lamb on a preheated cast-iron skillet without oil for the last minute. Always rest the meat before assembling to keep juices intact.

Can I use a different cut of lamb instead of boneless leg?

Boneless leg is the best choice here because it’s lean enough to slice thin and holds up to high heat. Lamb shoulder will work but has more fat running through it, which means more trimming and slightly longer cook times.

How long can I marinate the lamb — is overnight too long?

Overnight is actually ideal and won’t hurt the texture. The lemon juice is mild enough that it won’t break down the meat the way a very acidic marinade would, so 8–12 hours in the fridge is fine.

Can I use regular yogurt instead of Greek yogurt for the tzatziki?

You can, but you’ll need to strain it first. Line a sieve with a paper towel, add the yogurt, and let it drain in the fridge for at least an hour. Regular yogurt has too much liquid and will make the tzatziki runny.

What if I can’t find Greek-style pita?

Regular pita pocket bread works — just warm it well so it’s flexible. Flatbread or even a flour tortilla will do the job in a pinch, though the texture is different.

Is there a way to tell when the lamb is actually cooked through without cutting into every piece?

Look for the edges to turn fully opaque and the surface to develop visible char marks — at that point, thin slices are done. If you want to be certain, an instant-read thermometer should read 160°F for well-done, though 145°F is safe for lamb.
