This chicken teriyaki comes together in 45 minutes using seven ingredients you likely already have: soy sauce, sake, mirin, brown sugar, garlic, ginger, and chicken thighs. The glaze is made by reducing the marinade in a separate pan — no bottled sauce, no cornstarch — which gives you that thick, glossy finish without any shortcuts. It’s a reliable weeknight dinner that reheats well, which makes it worth cooking a full batch even when you’re only feeding two.

Before you start

Two things determine whether this dish works. First, pull the chicken out of the fridge about 15 minutes before cooking — cold chicken straight into a hot pan drops the pan temperature and steams instead of sears, so you lose the caramelized crust that makes teriyaki worth making. Second, keep the reserved marinade completely separate from the start: pour off your glaze portion before the raw chicken goes in, not after. Once raw chicken has touched the marinade, you must bring it to a full boil and hold it there for at least two minutes before using it as a glaze — skipping this step is a food safety issue, not just a texture one.

Mistakes to avoid

  • Crowding the pan. If the thighs are touching, steam builds up and the chicken braises rather than sears. Cook in two batches if your skillet is smaller than 12 inches.
  • Skipping the pat-dry step. Surface moisture on the chicken fights browning. Give each thigh a quick press with paper towels before it goes in the pan, even after marinating.
  • Pulling the chicken too early. Thighs look done on the outside before the center hits 165°F. Use a meat thermometer — visual cues alone aren’t reliable with thicker cuts.
  • Letting the glaze reduce too far. If it cools to a hard, sticky film on the pan, it’s gone too far. Add a tablespoon of water off the heat and stir — it will loosen back to a brushable consistency.
  • Slicing before resting. Give the cooked chicken two to three minutes on a cutting board before slicing. It holds more juice and the slices stay cleaner.

Keeping and reheating

Cooked chicken teriyaki keeps in an airtight container in the fridge for up to four days — store it sliced, which makes it faster to reheat and easier to portion into lunches. To reheat, add the chicken to a cold skillet with a tablespoon of water, cover, and warm over medium-low for three to four minutes; the steam prevents it from drying out. Skip the microwave if you can, but if you use it, cover the container and go in 30-second bursts. For longer storage, freeze the cooked, glazed chicken flat in a zip-lock bag for up to two months. Thaw overnight in the fridge and reheat the same way. The glaze holds up well through freezing — texture stays intact once reheated. Skip the sesame seed garnish before storing; add fresh ones when you serve it, otherwise they go soft and add nothing.

Instructions
 

  • Marinate the Chicken: In a medium bowl, whisk together soy sauce, sake, mirin, brown sugar, garlic, and ginger. Add chicken thighs and marinate for at least 15 minutes, or up to 1 hour in the fridge for deeper flavor.
  • Prepare Your Skillet: Heat a large nonstick skillet or grill pan over medium heat (about 350°F / 175°C). If using a grill pan, lightly brush it with oil to prevent sticking.
  • Cook the Chicken: Remove the chicken from the marinade, reserving the marinade for later. Place chicken thighs down (or presentation side down) and sear for 5–6 minutes or until golden and starting to caramelize. Flip and cook an additional 4–5 minutes or until internal temperature reaches 165°F (74°C).
  • Reduce the Marinade: In a small saucepan, bring the reserved marinade to a gentle boil. Simmer for about 5 minutes or until thickened into a glossy glaze. Stir frequently to avoid sticking. You should see the sauce coat the back of a spoon.
  • Glaze and Finish: Brush the cooked chicken with the teriyaki glaze, letting it lightly char if desired. Slice into strips for easier serving.
  • Serve: Plate over steamed jasmine rice. Garnish with scallions and toasted sesame seeds for color and crunch.
