This is a straightforward Roman carbonara — spaghetti, guanciale, eggs, Pecorino Romano, and black pepper. No cream, no shortcuts. It comes together in 35 minutes, and if you make a full batch, the leftovers reheat better than most pasta dishes you’ll try.

Why this recipe works

Two things actually matter here. First, pulling the pasta just shy of al dente and finishing it in the guanciale pan means the spaghetti absorbs rendered fat as it finishes cooking — that’s where a lot of the flavor comes from. Second, letting the pasta cool for 30 seconds before adding the egg mixture is the difference between a glossy sauce and scrambled eggs. The eggs need gentle, residual heat to thicken slowly. Adding pasta water one tablespoon at a time gives you control over the final texture, so you can stop when the sauce coats the noodles without pooling at the bottom of the plate.

About the ingredients

  • Guanciale: Cured pork jowl with a softer fat and earthier flavor than pancetta or bacon. It’s worth sourcing — Italian delis and many grocery stores carry it. If you genuinely can’t find it, pancetta is the closest substitute, but expect a milder result. Skip the bacon; the smokiness pulls the dish in a different direction.
  • Pecorino Romano: Sharp, salty, and made from sheep’s milk. It behaves differently than Parmesan — it melts into the sauce rather than clumping. Buy a block and grate it yourself; pre-grated Pecorino is often too coarse and won’t emulsify cleanly.
  • Eggs at room temperature: Cold eggs straight from the fridge are more likely to seize when they hit warm pasta. Set them out 20–30 minutes before you start.
  • Bronze-cut spaghetti: The rougher surface holds sauce better than smooth extruded pasta. Not essential, but noticeable.

What can go wrong

  • The sauce turns grainy or dry the next day: Carbonara tightens as it sits. To reheat leftovers, add a splash of water to the pan over low heat and stir constantly — it will loosen back into a sauce. Skip the microwave entirely.
  • The guanciale fat solidifies in the pan before the pasta arrives: If there’s a delay after rendering the guanciale, keep the pan on the lowest heat setting. You want the fat liquid, not congealed, when the pasta goes in.
  • The cheese clumps instead of melting into the sauce: This usually means the Pecorino was added to pasta that was too hot, or it wasn’t grated finely enough. Use a microplane, and make sure the egg-cheese mixture goes in after that 30-second rest.
  • The sauce is too thick and pasty: You need more pasta water. Add it a tablespoon at a time and keep stirring — the starch in the water is what makes the sauce glossy rather than gluey. Four to five tablespoons is a guideline, not a ceiling.
  • The guanciale is chewy instead of crisp: Medium heat and patience. High heat renders the fat too fast and leaves the meat tough. Five to six minutes at medium, stirring occasionally, gets you golden and crisp all the way through. Skip the garnish of extra guanciale on top — not worth the extra pan.

  • 12 ounces spaghetti preferably bronze-cut for better sauce absorption
  • 6 ounces guanciale cut into 1/4-inch batons
  • 4 large egg yolks at room temperature
  • 2 large whole eggs at room temperature
  • 1 cup Pecorino Romano cheese finely grated, freshly grated is best
  • ½ teaspoon freshly cracked black pepper plus extra for garnish
  • 1 tablespoon kosher salt for pasta water

Instructions
 

  • Bring a large pot of water to a boil. Add kosher salt and cook the spaghetti until just shy of al dente, about 8–9 minutes. Reserve 1 cup of pasta water before draining.
  • While pasta cooks, heat a large sauté pan over medium heat. Add the guanciale and cook for 5–6 minutes until fat is rendered and the pieces are golden and crisp. Remove from heat.
  • In a mixing bowl, whisk together egg yolks, whole eggs, Pecorino Romano, and freshly cracked black pepper until smooth and creamy.
  • Transfer the hot, drained pasta to the pan with guanciale. Toss well to coat. Allow it to cool for 30 seconds to prevent scrambling the eggs.
  • Gradually pour the egg and cheese mixture over the pasta, stirring vigorously. Add reserved pasta water, 1 tablespoon at a time, to loosen the sauce until glossy and luxuriously creamy. Roughly 4–5 tablespoons should suffice.
  • Plate immediately. Finish with additional Pecorino Romano and a fresh crack of black pepper.
