This is a no-bean beef chili built around a homemade dried chili paste — ancho and guajillo chilies toasted and blended into the base — which gives it a depth that chili powder alone just can’t match. It takes about 3.5 hours start to finish, most of that hands-off simmering time. If you’ve got a Dutch oven and a blender, you have everything you need.

Why this recipe works

Two things make the difference here. First, building the chili base from whole dried chilies rather than a spice jar: toasting the anchos and guajillos wakes up their oils, and blending them with broth gives you a thick, flavored paste that coats the beef as it cooks — not just a seasoned liquid. Second, the tomato paste goes into the pot before the liquid, cooked directly in the fat with the spices for a minute or two. That short step drives off the raw, tinny edge and pushes the paste toward something richer and more savory, which matters in a dish with this few ingredients.

If something goes sideways

  • Chili tastes flat or one-dimensional: Add the apple cider vinegar gradually and taste as you go — a little acid at the end does more to sharpen flavors than extra salt. If it still feels dull, a small pinch of smoked paprika stirred in at the end can help.
  • Beef is tough after 3 hours: Chuck needs genuine low heat to break down. If your burner runs hot, the liquid may be boiling rather than barely simmering — move the pot to your smallest burner, use a diffuser if you have one, or transfer to a 300°F oven with the lid on for the last hour.
  • Chili paste is bitter: The dried chilies burned during toasting. Thirty seconds too long in a dry skillet is all it takes. If the finished chili has a harsh, bitter edge, a small amount of honey or a square of dark chocolate stirred in can pull it back — skip the garnish, not worth the extra dish.
  • Sauce is too thin: Remove the lid for the last 20–30 minutes of simmering and let it reduce. Don’t add flour or cornstarch — just time and heat.
  • Can’t find dried ancho or guajillo chilies: Ancho powder (1 tablespoon per dried chili) and guajillo powder work as a direct swap. The texture of the base will be slightly thinner, but the flavor is close enough. Most grocery stores carry these in the spice or Latin foods aisle.

Keeping and reheating

This chili keeps well in the fridge for up to 5 days in a sealed container — the flavor genuinely improves by day two as everything settles together. For longer storage, freeze in portions for up to 3 months; leave a little headspace in the container since the liquid expands. Reheat on the stovetop over medium-low heat, stirring occasionally and adding a splash of beef broth or water if it’s thickened too much in the fridge. Microwave reheating works fine for single portions — cover loosely and go in 90-second intervals, stirring between each.

  • 3 tablespoons vegetable oil or beef tallow for deeper flavor
  • 2.5 pounds beef chuck, trimmed and cut into 1-inch cubes look for well-marbled pieces for tenderness
  • 2 medium yellow onions, diced
  • 6 cloves garlic, minced
  • 3 pieces dried ancho chilies stems and seeds removed
  • 2 pieces dried guajillo chilies stems and seeds removed
  • 1 tablespoon ground cumin freshly ground preferred
  • 1 teaspoon dried oregano Mexican oregano if available
  • 1 teaspoon smoked paprika
  • 2 tablespoons tomato paste
  • 2.5 cups beef broth low sodium preferred
  • 1 tablespoon apple cider vinegar for brightness
  • 1 teaspoon kosher salt plus more to taste
  • ½ teaspoon freshly ground black pepper

Instructions
 

  • Toast the ancho and guajillo chilies in a dry skillet over medium heat for 1–2 minutes per side until fragrant. Be careful not to let them burn.
  • Place the toasted chilies in a bowl with 1 cup of hot water. Cover and let them soak for 20 minutes until softened. Drain and blend with a splash of beef broth until smooth.
  • Heat oil in a large Dutch oven over medium-high heat. Sear the beef cubes in batches until well browned on all sides. Remove and set aside.
  • Add onions to the pot and cook for 7–10 minutes until deeply golden, stirring occasionally. Add garlic and cook for another minute.
  • Stir in the tomato paste, cumin, oregano, and smoked paprika. Cook for 1–2 minutes to caramelize the paste slightly.
  • Return beef to the pot. Add the blended chili mixture and beef broth. Stir to combine, then bring to a simmer.
  • Cover and simmer on low heat (300°F / 150°C) for 2.5 to 3 hours, uncovering in the final 30 minutes to reduce and thicken. Stir occasionally.
  • Finish with apple cider vinegar, salt, and black pepper. Adjust seasoning to taste before serving.

FAQ

Can I use a different cut of beef instead of chuck?

Yes — brisket is the most common swap and works very well here. It has similar fat marbling to chuck and becomes tender with the same long simmer. Avoid lean cuts like round or sirloin; they’ll dry out and turn stringy over 3 hours of cooking.

I only have canned chipotles in adobo — can I use those instead of dried chilies?

You can use them as a partial substitute, but they’ll shift the flavor profile toward smoky and spicy rather than the earthy, slightly fruity base the dried anchos and guajillos provide. Use 2–3 chipotles with a tablespoon of the adobo sauce, and supplement with 1 tablespoon of ancho powder if you can find it.

Do I have to use a blender for the chili paste?

A blender gives you the smoothest result, but a food processor works almost as well. If you have neither, you can mince the soaked, softened chilies very finely by hand and stir them directly into the pot — the texture will be slightly coarser but the flavor will still be there.
