This egg salad comes together in 25 minutes with six eggs and a handful of pantry staples. The dressing uses Dijon mustard, a small splash of white vinegar, and fresh lemon juice to cut through the mayo — so it tastes bright rather than heavy. It works on toast, crackers, or lettuce leaves, and it keeps well in the fridge for a few days of easy lunches.

Ingredient notes

  • Mayonnaise: Full-fat works best here because the dressing is simple and mayo carries most of the body. If you only have light mayo, add a teaspoon less lemon juice — light mayo is already thinner and slightly more acidic.
  • Dijon mustard: Yellow mustard is a workable swap. Use the same amount but expect a milder, slightly sweeter result. Whole-grain mustard also works and adds a little texture.
  • Red onion: Any onion you have on hand is fine. White or yellow onion is sharper, so use a little less. Green onion tops are the mildest option if you want something more subtle.
  • Fresh chives: These are listed as optional in the recipe, and skipping them is genuinely fine — the salad is complete without them. Save the extra dish.
  • White vinegar: Apple cider vinegar is a direct swap at the same quantity. It adds a faint fruitiness that works well here.

What makes this version work

Two things matter most. First, pulling the eggs off the heat and letting them sit covered for exactly 10 minutes — rather than boiling them the whole time — gives you yolks that are fully set but still creamy and pale yellow, with no rubbery whites. Second, mixing the dressing separately before adding the eggs means every piece gets evenly coated without you having to mash or over-stir. Folding gently at the end keeps some distinct chunks of white, which gives the salad better texture than a paste-like mix would.

If something goes sideways

  • The salad is watery after chilling: Celery releases moisture as it sits. Pat the diced celery dry with a paper towel before adding it to the bowl. If the salad is already made and watery, drain off the liquid and stir in a small spoonful of extra mayo to rebind it.
  • The eggs are hard to peel: Very fresh eggs cling to their shells. If you have the time, eggs that are a week or more old peel far more cleanly. The ice bath helps regardless, but it won’t fully fix an egg that’s too fresh.
  • The dressing tastes flat: Taste before you add the eggs. If it seems dull, a small pinch more salt usually fixes it faster than adding more mustard or lemon. Add acid last, in tiny amounts, so you don’t overshoot.
  • The salad is too thick and dense: Stir in a teaspoon of cold water or a little extra lemon juice to loosen it. This happens most often if the mayo was measured generously or the eggs were on the smaller side.
  • The yolks have a grey-green ring: The eggs cooked too long or cooled too slowly. They’re still safe to eat and the flavor is mostly fine, but next time move them into the ice water immediately after the 10-minute rest.

Leftovers and make-ahead

Store egg salad in a sealed container in the refrigerator for up to 3 days. Press a piece of plastic wrap directly against the surface before putting the lid on — this slows oxidation and keeps the top from drying out. The flavor is actually better on day two once everything has had time to settle. Do not freeze egg salad; the egg whites turn spongy and the mayo breaks when thawed. If you’re making this ahead for a gathering, hold off on adding the celery until a few hours before serving so it stays crisp.

  • Drain and transfer eggs to a bowl of ice water to cool completely—this stops cooking and makes peeling easier. Let sit for 5 minutes.
  • Peel the eggs under cold running water for best results. Chop them roughly into 1/2-inch pieces.
  • In a mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, vinegar, celery, red onion, salt, pepper, and fresh chives if using. Stir until well blended.
  • Add the chopped eggs to the dressing mixture. Gently fold with a spatula until the eggs are fully coated, maintaining some texture.
  • Taste and adjust seasoning with additional salt or lemon juice if desired. Chill in the refrigerator for at least 15 minutes before serving for flavors to meld.
