These hush puppies come out crispy on the outside and tender in the middle — the kind of result that’s easy to get wrong if you don’t know the two things that actually matter. The recipe uses pantry staples: yellow cornmeal, buttermilk, onion, and a little sugar for that classic sweet-savory thing. Total time is 35 minutes, and the batch makes enough to serve six with plenty left over for the next day.

What makes this version work

Two things matter here. First, resting the batter for 5 minutes before frying. The cornmeal absorbs the buttermilk during that rest, which tightens the batter just enough to hold its shape in hot oil instead of spreading into flat discs. Second, oil temperature. At 350°F the outside sets quickly and browns evenly while the inside cooks through. Drop below that and the batter soaks up oil before it can form a crust — you end up with greasy, heavy fritters. A clip-on thermometer takes the guesswork out completely, and it also helps you catch the temperature drop that happens when you add a new batch, so you know when to wait before dropping in more.

Shopping notes

  • Cornmeal grind: Fine or medium grind both work here. Coarse grind gives you a grittier texture that some people love but kids often don’t — worth knowing before you buy.
  • Buttermilk: Whole-fat buttermilk gives the best result. If you only have low-fat, it still works but the interior is slightly less rich. Powdered buttermilk reconstituted with water also works in a pinch.
  • Oil: Peanut oil has a higher smoke point and a neutral flavor that works well here. Vegetable oil is a fine substitute. Skip olive oil — the smoke point is too low for this temperature.
  • Chives vs. green onions: Either works. Skip the garnish — not worth the extra dish when the onion is already in the batter doing the real work.

Mistakes to avoid

  • Overcrowding the pot: Adding too many at once drops the oil temperature fast. Fry in small batches of 4 to 6 at a time and let the oil come back to 350°F between rounds.
  • Making the scoops too large: Big portions don’t cook through before the outside over-browns. A heaping tablespoon — about the size of a large grape — is the right target. A small cookie scoop keeps them consistent.
  • Skipping the drain step: Pulling them straight onto a plate traps steam underneath and softens the crust within minutes. Drain on a wire rack set over paper towels if you have one, or paper towels alone — just don’t stack them while hot.
  • Mixing the batter too far ahead: The baking powder and baking soda start working as soon as they hit the wet ingredients. Mix, rest 5 minutes, fry. If the batter sits for 20+ minutes, the lift is mostly gone and the centers come out dense.
  • Reheating in the microwave: It kills the crust entirely. A 375°F oven for 8 to 10 minutes on a bare baking sheet brings leftover hush puppies back close to fresh — still crispy on the outside, warm all the way through.

  • 1 cup yellow cornmeal use fine or medium grind for balanced texture
  • ½ cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper optional, adds a gentle heat
  • 1 cup buttermilk whole fat for richness
  • 1 large egg beaten
  • ½ cup yellow onion finely minced
  • 2 tablespoons chives or green onions finely chopped, optional for added freshness
  • 4 cups vegetable oil or peanut oil for frying

Instructions
 

  • In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, salt, and cayenne pepper, if using.
  • In a separate bowl, combine the buttermilk and beaten egg. Stir in the minced onion and chives (if using).
  • Pour the wet ingredients into the dry and stir until just combined. Do not overmix. The batter should be thick but spoonable. Let rest for 5 minutes.
  • Heat 4 inches of vegetable oil in a deep pot to 350°F (175°C). Use a thermometer to maintain temperature.
  • Using a mini ice cream scoop or two spoons, carefully drop heaping tablespoons of batter into the hot oil. Don't overcrowd—fry in batches.
  • Fry for 3 to 5 minutes, turning occasionally until deeply golden brown on all sides. Remove and drain on paper towels.
  • Repeat with remaining batter. Keep warm in a low (200°F / 90°C) oven if needed.
