This is a rack of lamb coated in a Dijon-and-herb paste, seared on the stovetop, then roasted to medium-rare and served with garlic mashed Yukon Golds. The honest reason to make it: it looks impressive, but the active work is under 20 minutes and most of the cooking is hands-off in the oven. If you want a dinner that feels special without a complicated technique, this is a reliable one.

The technique that matters

Two steps carry the whole dish. First, dry the lamb thoroughly before seasoning — surface moisture is the enemy of a good sear, and a pale, steamed crust will stay pale through the oven too. Pat it down firmly with paper towels, not just a quick dab. Second, press the herb paste on firmly after the mustard goes on. The mustard acts as glue, but if the paste is just laid on loosely it slides off in the pan or cracks away during roasting. Use your palm and fingers to compact it into the meat. After that, an instant-read thermometer is the only thing standing between you and overcooked lamb — pull it at 125°F and let carryover heat do the rest during the 10-minute rest.

Keeping and reheating

Leftover lamb chops keep in an airtight container in the fridge for up to 3 days. To reheat without drying out the meat, bring the chops to room temperature for 15 minutes, then warm them in a covered skillet over low heat with a splash of water or broth for 4 to 5 minutes — the oven tends to finish cooking them further and ruins the medium-rare center. The herb crust softens on reheating regardless of method, so skip trying to re-crisp it. Mashed potatoes reheat well on the stovetop over low heat with a splash of warm cream or milk stirred in; they thicken up in the fridge and need that extra liquid to loosen. Cooked lamb can be frozen for up to 2 months, tightly wrapped, though the crust texture suffers — it’s better eaten fresh or within the 3-day fridge window.

What can go wrong

  • The herb crust burns before the lamb is done. This usually means the oven runs hot or the crust was too thin in spots. If the top is browning too fast after 15 minutes, tent the rack loosely with foil for the remaining roasting time.
  • The mashed potatoes turn gluey. Over-mashing activates the starch and makes them paste-like. Use a masher or ricer, not a hand mixer, and stop as soon as the lumps are gone. Stir in the butter and cream by hand.
  • The sear sticks and pulls the crust off. The pan wasn’t hot enough before the lamb went in. Let the oil shimmer and just begin to smoke before adding the meat, and don’t move it — let it release naturally after about 2 minutes.
  • The lamb tastes gamey in an unpleasant way. This is usually from fat left on the rack. Make sure the lamb is well-trimmed before the herb paste goes on — skip the garnish of extra whole rosemary sprigs too, not worth the extra dish.
  • The garlic flavor in the potatoes is sharp instead of mellow. The garlic needs to cook fully with the potatoes, not just be added raw at the mash stage. If your garlic cloves are large, halve them so they soften at the same rate as the potato cubes.

For the Rack of Lamb:

  • 2 pounds rack of lamb (each with 8 bones) trimmed and frenched
  • 1 teaspoon kosher salt divided
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons Dijon mustard
  • ¼ cup fresh parsley finely chopped
  • ¼ cup fresh rosemary finely chopped
  • 1 tablespoon fresh thyme leaves
  • 3 tablespoons olive oil divided

For the Garlic Mashed Potatoes:

  • 2 pounds Yukon Gold potatoes peeled and cubed
  • 4 cloves garlic peeled
  • ½ cup heavy cream warmed
  • ¼ cup unsalted butter
  • ½ teaspoon kosher salt for potatoes

Instructions
 

  • Preheat your oven to 400°F (204°C).
  • Pat the lamb with paper towels until dry. Season with 1/2 teaspoon kosher salt and black pepper on all sides.
  • Brush Dijon mustard over the meat side of each rack. Mix parsley, rosemary, thyme, and 2 tablespoons olive oil into a paste and press firmly onto the mustard-coated lamb to create the herb crust.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the lamb racks, fat-side down, until lightly browned (about 2 minutes per side). Transfer to a roasting pan, crust side up.
  • Roast the lamb in the preheated oven for 20-25 minutes for medium-rare, or until it reaches an internal temperature of 125°F (52°C). Rest for 10 minutes before slicing into chops.
  • Meanwhile, boil cubed potatoes and garlic cloves in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
  • Mash the potatoes and garlic together. Add butter, warm cream, and salt. Stir until silky and smooth.
  • Slice lamb between the ribs for individual chops. Serve alongside a generous scoop of garlic mashed potatoes. Garnish with a drizzle of pan juices or fresh herbs.
