This is a raw Swiss chard salad with cherry tomatoes, cucumber, red onion, and a four-ingredient lemon-garlic dressing. It takes 25 minutes, uses one bowl, and the whole thing comes together without turning on the stove. If you have a bunch of chard sitting in the fridge and need a side that isn’t another bag of mixed greens, this is a solid option.

The short version of why this works

Two things make this salad actually good rather than just healthy. First, stripping the stems from the leaves before chopping matters — the stems are tougher and take longer to soften, so leaving them in gives you an uneven texture. Second, the five-minute rest after dressing is not optional. Lemon juice starts to break down the raw chard slightly, which tones down the bitterness and makes the leaves easier to eat. Skip the rest and the salad tastes sharper and chewier than it should.

About the ingredients

  • Swiss chard: Rainbow chard works fine and looks nice, but any variety does the job. The leaves should feel firm, not slimy — that’s your freshness check at the store.
  • Extra virgin olive oil: This dressing has only four ingredients, so the oil is noticeable. Use one you’d dip bread in, not the giant jug you cook with.
  • Fresh lemon juice: Bottled lemon juice is too flat here. Half a lemon is all you need and it takes ten seconds.
  • Red onion: Slice it as thin as you can. A thick slice will overpower everything else. If raw onion is too sharp for your family, soak the slices in cold water for five minutes and pat dry.

Make-ahead notes

You can wash, dry, and chop the chard up to two days ahead — store it in an airtight container with a paper towel to absorb moisture. The dressing keeps in a small jar in the fridge for up to five days; give it a shake before using. Do not dress the salad more than 30 minutes before serving. After that, the cucumbers release water and the leaves go limp. This salad does not freeze.

Mistakes to avoid

  • Not drying the chard properly: Water left on the leaves dilutes the dressing and the salad ends up watery at the bottom of the bowl. A salad spinner is the fastest fix; if you don’t have one, roll the leaves in a clean kitchen towel and press firmly.
  • Over-dressing: Two tablespoons of oil is the right amount for one bunch of chard. Adding more because it looks dry before tossing is the most common way to make this salad heavy and greasy — toss first, then assess.
  • Skipping the seasoning taste-test on the dressing: Lemons vary in acidity and garlic cloves vary in strength. Whisk the dressing, taste it on a piece of chard, and adjust before it goes on the whole salad. Skip the garnish of extra cherry tomatoes — not worth the extra dish.
  • Chopping the leaves too small: Bite-size means roughly two-inch pieces. Smaller than that and the salad turns into a mash after the rest period.

Salad Base:

  • 1 bunch organic swiss chard washed, dried, and roughly chopped
  • 1 cup cherry tomatoes halved
  • ½ cup cucumber thinly sliced
  • ¼ cup red onion finely sliced

Dressing:

  • 2 tablespoons extra virgin olive oil best quality available
  • 1 tablespoon fresh lemon juice about half a lemon
  • 1 clove garlic minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper freshly ground

Instructions
 

  • Begin by preparing the Swiss chard. Strip the stems from the leaves, then wash and dry thoroughly using a salad spinner. Roughly chop the leaves into bite-size pieces.
  • In a large mixing bowl, combine the Swiss chard, cherry tomatoes, cucumber, and red onion. Set aside.
  • For the dressing, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, sea salt, and black pepper in a small bowl until emulsified. Taste and adjust seasoning if needed.
  • Drizzle the dressing over the salad and toss gently to ensure even coating. Let it sit for about 5 minutes to allow the flavors to meld.
  • To serve, arrange the salad in individual bowls or plates. Garnish with extra cherry tomatoes and a sprinkle of fresh ground pepper for an elegant touch.

Can I eat Swiss chard raw, or does it need to be cooked?

Yes, raw Swiss chard is safe and good to eat. The lemon juice in the dressing softens the texture and reduces the slight bitterness, which is why the five-minute rest after dressing makes a real difference.

What can I add to make this a full meal?

Chickpeas are the easiest option — drain and rinse a can and toss them straight in. Grilled chicken sliced on top also works well and keeps the dish in the same bowl.

My family doesn’t like bitter greens. Will they eat this?

Probably, yes. The lemon juice and salt pull a lot of the bitterness out during the rest period. If you want extra insurance, use only the inner, lighter-colored leaves from the bunch, which are milder than the darker outer ones.

Can I use a different green if I can’t find Swiss chard?

Kale works as the closest substitute — massage it briefly with a pinch of salt before adding the other ingredients to soften it. Baby spinach is milder and needs no prep, but it wilts faster once dressed, so serve it immediately.

The dressing looks separated when I pour it on. Did I do something wrong?

No — olive oil and lemon juice don’t stay emulsified for long without an emulsifier like mustard. Just whisk it again right before pouring, or give the jar a hard shake, and it will coat the salad evenly.
