Cuban picadillo is ground beef cooked down with tomato sauce, green olives, raisins, and a short list of warm spices until you get a thick, savory-sweet skillet meal that works on a weeknight and scales easily for a crowd. The whole thing takes about an hour and uses one pan. It’s the kind of recipe that earns a permanent spot in your rotation because it’s genuinely low-effort and genuinely good.

What makes this version work

Two things matter here. First, blooming the spices — cumin, oregano, cinnamon, and cloves — directly in the hot beef fat for a full minute before the tomato sauce goes in. That step takes the spices from dusty background notes to something you can actually taste. Skip it and the dish is flat. Second, the 15-to-20-minute uncovered simmer is doing real work: it reduces the tomato sauce into a coating rather than a soup, which means the beef, olives, and raisins all hold together instead of floating in liquid. If your sauce still looks thin at the 15-minute mark, just keep going — another five minutes makes a noticeable difference.

Storage and reheating

Picadillo keeps well in the fridge for up to 4 days in a sealed container — the flavor actually improves by day two as the spices settle in. For longer storage, freeze it flat in zip-lock bags or in a freezer-safe container for up to 3 months. Thaw overnight in the fridge. Reheat on the stovetop over medium-low with a splash of water or broth stirred in, since the sauce tightens up considerably when cold; two to three minutes of gentle stirring brings it back. The microwave works in a pinch — cover loosely and use 50% power in 90-second intervals to avoid drying out the beef.

Mistakes to avoid

  • Crowding the pan when browning the beef: If you’re doubling the recipe, brown the beef in two batches. One large pile of meat steams instead of browns, and you lose the fond on the bottom of the pan that adds depth to the sauce.
  • Using salted tomato sauce without adjusting: The olives already bring significant salt. If your tomato sauce is salted, hold off on adding any extra salt until the very end, after a full taste — it’s easy to over-salt this dish before the simmer concentrates everything.
  • Chopping the olives too small: Sliced olives disappear into the sauce. Leave them in halves or rough thirds so you actually get that briny pop in individual bites. Skip mincing them entirely — not worth losing the texture.
  • Pulling it off the heat too early: A watery picadillo won’t hold on rice or inside empanadas. The sauce needs to look glossy and thick, not soupy. If you’re serving a group and made a big batch, give it the full 20 minutes and check the consistency before you call it done.
  • Forgetting to remove the bay leaf before serving: It won’t ruin the dish, but biting into a bay leaf is unpleasant and easy to avoid — fish it out before you start spooning into bowls or a serving dish.

  • 1 piece bay leaf

Instructions
 

  • Heat the olive oil in a large skillet over medium heat (about 350°F / 175°C). Add the chopped onion and sauté until translucent and beginning to caramelize, about 5–7 minutes.
  • Add minced garlic and stir for 30 seconds until aromatic but not browned.
  • Add the ground beef and break it apart with a wooden spoon. Cook until browned with no visible pink, about 8–10 minutes.
  • Stir in cumin, oregano, cinnamon, and cloves. Cook for 1 minute to bloom the spices.
  • Pour in the tomato sauce and reduce heat to low. Add olives, raisins, and bay leaf. Simmer uncovered for 15–20 minutes, stirring occasionally to avoid sticking. The sauce should thicken and become rich.
  • Season with salt and pepper to taste. Remove bay leaf before serving.
