These teriyaki pork lettuce cups come together in about 35 minutes using ground pork and a handful of pantry staples — soy sauce, mirin, honey, garlic, and ginger. The filling is saucy and savory, the lettuce keeps things light, and the whole thing works just as well as a quick weeknight dinner as it does set out for a crowd. No special equipment, no hard-to-find ingredients.

Ingredient notes

  • Mirin: If you don’t have mirin, mix 2 tablespoons of dry sherry or rice wine vinegar with a small pinch of sugar. It won’t be identical, but it gets you close enough.
  • Honey: Maple syrup or brown sugar (same amount) both work as a swap. Brown sugar gives a slightly deeper flavor.
  • Ground pork: Ground turkey or chicken can replace pork. The filling will be a little leaner and drier, so pull it off the heat as soon as the sauce thickens.
  • Butter lettuce: Romaine hearts or iceberg work fine — just cut the leaves into cup shapes if they’re flat. Butter lettuce is softer and easier to fold, but it’s not essential.
  • Toasted sesame seeds: Skip the garnish — not worth the extra dish if you don’t already have them on hand. The filling is flavorful enough on its own.

What makes this version work

Two things matter here. First, browning the pork properly before adding the sauce — let it sit in the pan without stirring for a minute or two so it actually browns rather than steams. That color adds flavor the sauce alone can’t replicate. Second, the timing of the sauce reduction: pour it in over medium heat, not high, and give it the full 3–4 minutes to thicken. Add it too early or rush the heat and you end up with watery filling that soaks through the lettuce before anyone gets a bite.

Mistakes to avoid

  • Crowding the pan: If your skillet is small, cook the pork in two batches. Too much meat at once drops the pan temperature and the pork steams instead of browns.
  • Adding garlic too early: The recipe adds garlic after the pork is cooked through for a reason. Garlic added to raw, wet meat just sits and turns bitter. Wait for the pork to be fully browned first.
  • Using full-sodium soy sauce without adjusting: The recipe calls for low-sodium soy sauce. If you only have regular, cut the amount to 3 tablespoons or the filling will be too salty once the sauce reduces.
  • Assembling too far ahead: Spoon the filling into lettuce cups right before serving. Sitting even 10 minutes makes the leaves go limp and the filling pools at the bottom.
  • Skipping the cooling step: The recipe says to let the filling cool slightly before assembling — don’t skip this. Hot filling wilts the lettuce immediately and makes the cups hard to pick up.

Leftovers and make-ahead

The cooked pork filling keeps well in an airtight container in the fridge for up to 4 days. Reheat it in a skillet over medium heat with a splash of water to loosen the sauce, or microwave it in 30-second bursts, stirring between each. It also freezes well — portion it into freezer bags and freeze for up to 2 months. Thaw overnight in the fridge before reheating. Store the lettuce separately and always assemble fresh; pre-assembled cups don’t hold up.

  • 1 tablespoon vegetable oil
  • 1 pound ground pork preferably raised without antibiotics
  • 3 cloves garlic minced
  • ¼ cup soy sauce low sodium
  • 2 tablespoons mirin

  • 1 teaspoon fresh ginger grated

Assembly

  • 1 head butter lettuce leaves separated and cleaned
  • ¼ cup green onions thinly sliced
  • ¼ cup toasted sesame seeds

Instructions
 

  • In a large skillet, heat the vegetable oil over medium-high heat (around 190°C / 375°F). Add the ground pork and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  • Add the minced garlic and grated ginger to the pork. Stir-fry until aromatic, about 1 minute. Be cautious not to burn the garlic.
  • Reduce the heat to medium and pour in the soy sauce, mirin, and honey. Stir to coat the pork evenly and let it simmer until the sauce thickens slightly, about 3-4 minutes.
  • Remove the skillet from the heat and set the mixture aside to cool slightly.
  • To assemble, spoon the teriyaki pork into the lettuce leaves. Garnish with green onions and a sprinkle of toasted sesame seeds for added texture and flavor.
