This beef and quinoa bowl comes together in about 45 minutes and uses one skillet plus one saucepan — no special equipment, no hard-to-find ingredients. The cumin-and-paprika beef sits on fluffy quinoa with cucumber, cherry tomatoes, parsley, feta, and a squeeze of lemon. It’s the kind of dinner that works on a Tuesday night and still feels like you put in some effort.

Why this recipe works

Two things make this bowl reliable. First, cooking the quinoa in chicken broth instead of plain water gives it a savory backbone, so it doesn’t taste flat next to the seasoned beef. Second, adding the spices after the beef is browned — not before — means the cumin and paprika toast briefly in the hot fat rather than steaming under raw meat. That two-minute step at the end of cooking the beef makes a real difference in how the spices smell and taste. Everything else is just assembly.

Ingredient notes

  • Quinoa: Any color works here — white, red, or tri-color. White cooks up the softest and is the least noticeable to kids who are skeptical of “different” grains.
  • Feta cheese: Block feta packed in brine is saltier and creamier than the pre-crumbled kind in a tub. If you use block feta, you may need less added salt in the beef.
  • Ground lamb swap: Ground lamb works well in place of beef and pairs naturally with the cumin and paprika. It has a stronger flavor, so start with a smaller amount of spice and adjust.
  • Parsley: Fresh only — dried parsley adds nothing here. If your family won’t eat visible green flecks, just leave it out. Skip the garnish — not worth the extra dish.

Leftovers and make-ahead

Store leftovers in an airtight container in the fridge for up to 3 days. The cucumber softens as it sits, so if you’re planning ahead, keep it separate and stir it in right before serving. The beef and quinoa reheat well together — a splash of water in the pan over medium-low heat for about 3 minutes does the job. The full assembled bowl also eats well cold straight from the fridge, which makes it a solid packed lunch. Freezing isn’t ideal here; the cucumber and feta don’t hold up well after thawing, but the cooked beef and quinoa on their own freeze fine for up to 2 months.

Mistakes to avoid

  • Not draining the beef fat before adding spices: Too much fat in the pan makes the spices clump and pool rather than coat the meat evenly. Tip the pan and spoon out the excess before you add the cumin and paprika.
  • Adding the tomatoes and cucumber while everything is still hot: Hot quinoa and beef will wilt the cucumber and make the tomatoes mushy. Let the cooked components cool for 5 minutes before you toss the bowl together.
  • Skipping the lemon juice or adding it too early: The lemon is what keeps the whole bowl from tasting heavy. Add it last, right before serving, so the brightness doesn’t cook off.
  • Under-seasoning the quinoa: Quinoa cooked in plain water can taste bland even with well-seasoned beef on top. Taste the quinoa on its own once it’s done and add a small pinch of salt if needed before combining everything.
  • Overcrowding the skillet: A pound of ground beef needs a large skillet. A pan that’s too small traps steam and the meat ends up gray and braised rather than properly browned.

Ingredients
 
 

  • 1 cup quinoa rinsed thoroughly
  • 2 cups water or low sodium chicken broth for added flavor
  • 1 tablespoon olive oil extra virgin, for sautéing
  • 1 pound ground beef grass-fed for richer flavor
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin ground
  • 1 teaspoon paprika
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper freshly ground
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup fresh parsley chopped
  • ¼ cup feta cheese crumbled
  • 2 tablespoons lemon juice freshly squeezed

Instructions
 

  • Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the quinoa and water (or broth) and bring to a boil. Cover, reduce the heat to low, and let it simmer for 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  • Meanwhile, in a large skillet over medium heat, warm the olive oil. Add the chopped onion and sauté for about 5 minutes until it softens and turns translucent. Add the garlic, cooking for another minute until fragrant.
  • Add the ground beef to the skillet. Cook, breaking the meat apart with a spatula, until browned and fully cooked, about 7-8 minutes. Drain any excess fat if necessary.
  • Stir in the cumin, paprika, salt, and black pepper, ensuring the meat is evenly coated with the spices. Cook for another 2 minutes to integrate the flavors.
  • In a large bowl, combine the cooked quinoa, seasoned beef, cherry tomatoes, cucumber, parsley, and feta cheese. Drizzle with lemon juice and gently toss all ingredients together until well combined.
  • Taste and adjust seasoning with additional salt, pepper, or lemon juice if desired. Serve immediately or refrigerate until ready to serve.

Can I use a different grain instead of quinoa?

Yes — couscous is the easiest swap and cooks in about 5 minutes. Brown rice or farro also work, but both take longer to cook than quinoa, so plan your timing accordingly.
