This is a spinach pesto pasta with a gimmick that actually works: the sauce is made looser than standard pesto so it coats every ribbon in a glossy, slick layer that kids find genuinely exciting and adults find genuinely good. The pasta is made from scratch with fresh spinach blended into the dough, which gives it a bright green color and a slightly earthy flavor that holds up against the bold basil sauce. If you have 50 minutes and want a dinner that gets everyone at the table talking, this is a solid pick.

What makes this version work

Two things matter here. First, squeezing every drop of moisture out of the blanched spinach before pureeing it — if you skip this, the dough gets wet and sticky, and the pasta tears when you roll it. Dry spinach puree blends cleanly into the flour and eggs without throwing off the ratio. Second, the pasta water. Adding a splash of the starchy cooking liquid to the pesto loosens it just enough to turn a thick paste into a sauce that actually clings instead of clumping. Don’t drain the pot before you’ve pulled that quarter cup — it’s the step that makes the texture work.

Smart swaps

  • Pine nuts: These are the priciest ingredient in the recipe. Toasted walnuts or toasted sunflower seeds both work well in the pesto and cost a fraction of the price.

What can go wrong

  • Pasta ribbons sticking together after cutting: This happens fast with fresh pasta. Toss the cut ribbons in a light dusting of flour immediately and spread them out on a baking sheet rather than piling them up.

  • Sauce seizes and clumps when tossed: This usually means the pasta cooled down too much before tossing. Toss the pasta with pesto while it’s still hot from the pot — the warmth keeps the sauce loose and glossy. Skip the garnish of extra Parmesan on top at the table; it just clumps on the slick sauce and isn’t worth the extra dish.
  • Pasta tears during rolling: If the dough springs back and resists rolling, it needs more rest. Wrap it back up and let it sit another 10 minutes before trying again.

Make-ahead notes

The pesto can be made up to 3 days ahead and stored in the fridge in a sealed jar with a thin layer of olive oil poured over the top to slow browning. The pasta dough can be made the night before — wrap it tightly in plastic and refrigerate it, then let it sit at room temperature for 15 minutes before rolling. If you want to get even further ahead, cut the pasta ribbons, dust them well with flour, and freeze them in loose nests on a baking sheet before transferring to a zip-lock bag; they keep for up to 1 month and go straight from frozen into boiling water with just an extra minute of cook time. Instructions
 

  • Prepare the Spinach Pasta Dough: Blanch the spinach in boiling water for 30 seconds, then plunge into an ice bath. Squeeze out all excess moisture. Puree the spinach until smooth in a food processor.
    On a clean counter, mound the flour and create a well in the center. Add eggs, olive oil, and the spinach puree into the well. Gradually incorporate flour into the wet mixture with a fork, then knead until smooth and elastic (about 8–10 minutes). Wrap in plastic wrap and let it rest for 30 minutes.
  • Roll and Cut the Pasta: Roll out the dough using a rolling pin or pasta machine until it’s about 1/8-inch thick. Slice into fettucine-like ribbons. Dust with a bit of flour to prevent sticking.
  • Prepare the Slime Green Pesto: In a food processor, combine basil, garlic, pine nuts, Parmesan, and a pinch of salt. Pulse several times. Then with the motor running, slowly drizzle in olive oil until the mixture becomes thick and glossy. Season with pepper.
  • Cook Pasta and Combine: Bring a large pot of salted water to a boil. Cook fresh noodles for about 2–3 minutes until they float and become tender. Reserve 1/4 cup pasta water, then drain.
