These bone-in pork chops get a garlic-rosemary-thyme paste rubbed in before a hard sear, a quick butter baste, and a short finish in the oven. The whole thing takes 45 minutes, and the result is a chop with a proper crust and a juicy center — no dry pork. It’s a genuinely reliable weeknight dinner that doesn’t ask much of you.

The short version of why this works

Two things make this recipe work. First, patting the chops completely dry before they hit the pan — any surface moisture turns to steam and kills the crust. Second, the sear-then-oven method: you get the browning you want on the stovetop, then the oven finishes the center gently so the meat doesn’t tighten up and squeeze out its juices. The butter baste in between isn’t decoration; it keeps the herb crust from scorching during that final oven time and adds a little richness to the fond already in the pan.

Smart swaps

  • Fresh herbs: Dried rosemary and thyme work in a pinch — use about one-third the amount, since dried herbs are more concentrated. Rub them between your fingers first to wake them up.
  • Butter: Unsalted is called for so you control the salt level. If you only have salted butter, just go lighter on the kosher salt at the seasoning step.
  • Bone-in vs. boneless: Boneless chops can be used, but they cook faster and dry out more easily. Pull them at 145°F and check early — shave a couple of minutes off the oven time.

Mistakes to avoid

  • Skipping the preheat on the cast iron: Cast iron needs a full 3–5 minutes over medium-high before the oil goes in. Put it in too early and the chops stick; the crust tears when you try to flip.
  • Moving the chops during the sear: Set them down and leave them alone. If they resist when you try to flip, they’re not ready. A properly seared chop releases on its own.
  • Forgetting that your oven runs differently than the recipe’s: Use a meat thermometer — 145°F internal is the target, not a specific number of minutes. Chop thickness varies, and so do ovens.
  • Cutting into the chops right away: Skipping the 5–7 minute rest means the juices run straight out onto the cutting board. Cover loosely with foil and wait — skip the garnish, not worth the extra dish.
  • Crowding the pan: Two chops at a time is usually the limit for a standard 12-inch cast iron. Crowding drops the pan temperature and you get gray, steamed meat instead of a sear.

Keeping and reheating

Leftover chops keep in an airtight container in the fridge for up to 3 days. To reheat without drying them out, place the chops in a covered skillet with a splash of water or chicken broth over low heat for about 5–6 minutes, flipping once. The oven also works — wrap tightly in foil and warm at 300°F for 10–12 minutes. Avoid the microwave if you can; it heats unevenly and the edges overcook before the center is warm. For freezing, wrap each chop individually in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge before reheating.

  • 4 cloves garlic minced finely

  • 2 tablespoons unsalted butter for basting

Instructions
 

  • Remove pork chops from the refrigerator and let them rest at room temperature for 20 minutes. This helps them cook evenly and stay juicy.
  • Pat each chop dry thoroughly with paper towels. Generously season both sides with kosher salt and black pepper.
  • In a small bowl, mix olive oil, minced garlic, rosemary, and thyme to form a fragrant herb paste.
  • Rub the herb-garlic mixture evenly onto both sides of each pork chop, pressing gently so it adheres.
  • Heat a cast iron skillet over medium-high heat until it’s nearly smoking (about 3–5 minutes).
  • Add a tablespoon of olive oil and sear the chops for 3–4 minutes per side until a deep golden crust forms. Avoid overcrowding; cook in batches if needed.
  • Reduce heat to medium-low. Add the butter and let it melt. Baste the chops continuously for 2–3 minutes using a spoon, tipping the pan to gather the butter and herbs.
  • Transfer the skillet to a preheated oven at 375°F (190°C) and roast for an additional 8–10 minutes, or until the internal temperature reaches 145°F (63°C).
  • Remove from the oven and let rest uncovered for 5–7 minutes before serving to retain juices.
