This chicken fried rice comes together in about 35 minutes and uses ingredients most households already have — day-old jasmine rice, cooked chicken, eggs, frozen peas and carrots, and a short list of pantry sauces. It tastes like takeout because the technique is right, not because anything exotic is in it. If you have leftover rice sitting in the fridge, this is the best thing you can do with it tonight.

Why this recipe works

Two things make or break fried rice at home: the rice and the heat. Cold, day-old rice has dried out just enough that each grain stays separate when it hits the pan — fresh rice steams instead of frying and turns gluey. The second factor is keeping the heat high throughout. A screaming-hot wok or skillet drives off moisture fast, which is what gives the rice those lightly toasted edges. The eggs go in first and come out before anything else is added, so they stay tender rather than rubbery. Everything else follows in order of how long it needs to cook, which means the whole thing is done in under 15 minutes once the pan is hot.

Ingredient notes

  • Oyster sauce: This is the ingredient people most often skip, and it makes a noticeable difference. It adds a mild sweetness and body that soy sauce alone doesn’t give. Find it in the Asian foods aisle of most grocery stores; a bottle lasts months in the fridge.
  • Sesame oil: Use toasted sesame oil (the dark kind), not plain. It goes in at the very end — it’s a finishing flavor, not a cooking fat, and it burns if you heat it too long.
  • Chicken: Rotisserie chicken is the fastest option. Any pre-cooked chicken works fine, including grilled or baked leftovers. Skip the garnish of extra green onion on the side — not worth the extra dish when the sliced tops go right into the stir-fry already.
  • Jasmine rice: Long-grain white rice also works. The key is that it’s cold and has been refrigerated at least several hours, ideally overnight.

Mistakes to avoid

  • Crowding the pan: This recipe serves four, and all that rice needs room. If your wok or skillet is smaller than 12 inches, cook it in two batches. A crowded pan drops the temperature and steams the rice instead of frying it.
  • Adding the sauce too early: Pour in the soy sauce and oyster sauce before the rice is hot and well-distributed, and the liquid soaks in unevenly. Add it after the rice has had its full 2–3 minutes of stir-frying.
  • Using wet thawed vegetables: Drain the peas and carrots after thawing and pat them dry if they look watery. Extra liquid in the pan is the enemy of crispy rice.
  • Turning the heat down when things start to smoke: Some smoke is expected and normal at this heat level. Turning it down to feel safer will ruin the texture. Use your exhaust fan and keep the heat up.
  • Breaking up the rice with a spoon instead of your hands: Cold rice clumps hard. Separate the grains by hand before the rice goes anywhere near the pan, or you’ll spend the first minute just trying to break up cold bricks while the other ingredients overcook.

Leftovers and make-ahead

Leftovers keep well in an airtight container in the fridge for up to 3 days. To reheat, use a skillet over medium-high heat with a small splash of water — about a tablespoon — and stir frequently until hot. This brings the texture back much better than the microwave, which makes the rice soft and uneven. You can also freeze portions for up to 2 months; thaw overnight in the fridge before reheating in the pan. If you want to get ahead on a busy week, cook and refrigerate the jasmine rice up to 2 days in advance so it’s ready to go when you need it.

Ingredients
 
 

  • 2 tablespoons vegetable oil divided
  • 2 cups cooked chicken breast diced; preferably from grilled or rotisserie chicken
  • 3 large eggs lightly beaten
  • 4 cups day-old cooked jasmine rice cold and separated by hand or fork
  • 1 cup frozen peas and carrots thawed
  • 4 whole green onions sliced thin, white and green parts separated
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil to finish
  • ½ teaspoon freshly ground black pepper

Instructions
 

  • Heat 1 tablespoon of the vegetable oil in a wok or large non-stick skillet over medium-high heat (about 190°C/375°F). Once shimmering, add the beaten eggs. Scramble quickly with a spatula until just set, about 1 minute. Remove and set aside.
  • Add the remaining tablespoon of oil to the hot wok. Add white parts of green onion and cook for 30 seconds until aromatic. Add diced chicken and stir-fry for 2 minutes until warmed through and beginning to turn golden at the edges.
  • Add peas and carrots. Stir-fry for another 1-2 minutes until vegetables are heated through.
  • Push the contents to the side, add a few drops more oil if needed, then add the rice. Flatten gently with your spatula and let toast undisturbed for about 1 minute to develop a crisp bottom before mixing everything together. Stir-fry for 2–3 minutes to combine thoroughly.
  • Return scrambled egg to the rice mixture. Add soy sauce, oyster sauce, and black pepper. Continue stir-frying for another 1–2 minutes until the rice is evenly coated and fragrant.
  • Drizzle with sesame oil, add the green onion tops, and quickly toss before removing from heat.

Notes

  • Use rice that’s been chilled for at least 4 hours or overnight. Freshly cooked rice will be too wet and sticky.
  • Add extra vegetables like diced bell peppers or bean sprouts for additional crunch and color.
  • For heat, a touch of chili garlic sauce or sriracha stirred in with the sauce is excellent.
  • To make it gluten-free, use gluten-free soy sauce (tamari) and ensure the oyster sauce is marked gluten-free.

Can I use freshly cooked rice if I don’t have day-old rice?

You can, but you need to dry it out first. Spread freshly cooked rice on a baking sheet in a single layer and refrigerate it uncovered for at least 1–2 hours before using. It won’t be quite as good as overnight rice, but it’s workable.

What if I don’t have a wok — can I use a regular pan?

Yes, a large stainless steel or cast iron skillet works well. The key is that it needs to be fully preheated before anything goes in; non-stick pans are fine too but may not get quite as hot, so give them an extra minute to warm up.

Can I make this without oyster sauce?

Yes — use an extra half tablespoon of soy sauce and a small pinch of sugar to approximate the balance. The result is a little thinner in flavor but still good, and it also makes the dish suitable for anyone avoiding shellfish.
