These grilled chicken tacos come together in 45 minutes, start to finish, and use one bowl for the marinade and one for the slaw. Chicken thighs stay juicy over high heat, the two-cabbage slaw adds crunch without any cooking, and the whole thing is easy enough for a Tuesday night.

Ingredient notes

  • Smoked paprika vs. regular paprika: Regular paprika will work but gives you less of that char-like depth. Smoked paprika is worth keeping in your spice drawer — it pulls double duty in a lot of weeknight recipes.
  • Chicken thighs: Boneless, skinless thighs are the right call here. If you only have breasts, cut them into thicker strips so they don’t dry out before getting any color.
  • Cotija cheese: Skip the cotija if you can’t find it — not worth a special trip. Crumbled feta is a reasonable substitute, or just leave it off.
  • Mexican crema vs. sour cream: Crema is thinner and a little less tangy, which makes it easier to drizzle. Sour cream works fine; thin it with a teaspoon of lime juice if it’s too thick to drizzle.
  • Corn tortillas: Warm them directly over a gas burner for 20–30 seconds per side, or wrap in a damp paper towel and microwave for 45 seconds. Cold tortillas crack and fall apart.

The short version of why this works

Two things matter most here. First, the marinade has enough acid from the lime juice to start breaking down the surface of the meat, which helps the spices stick and speeds up browning on the grill. Don’t skip the 20-minute minimum — less than that and you’re just coating the outside. Second, a medium-high grill (around 400°F) gives you actual char marks and a slightly crisp exterior without overcooking the inside. If the heat is too low, the chicken steams instead of sears and you lose the texture that makes these worth making.

If something goes sideways

  • Chicken sticks to the grill: It’s not ready to flip yet. Thighs release naturally once a proper sear forms — give it another 60–90 seconds before trying again. Forcing it tears the meat.
  • Slaw turns watery: The lime juice and salt draw moisture out of the cabbage over time. If you’re not eating right away, mix the dressing in just before serving, or salt the cabbage first, let it sit 10 minutes, and squeeze out the liquid before adding the other ingredients.
  • Marinade burns on the grill: Excess marinade dripping onto the heat source causes flare-ups and bitter char. Shake off the thighs before placing them on the grill — you want a light coating, not a puddle.
  • Chicken is cooked through but has no color: Your grill wasn’t hot enough. Let it preheat for at least 10 minutes with the lid closed before adding anything. A grill pan on the stove needs 3–4 minutes over medium-high before the chicken goes in.
  • Tortillas keep splitting: They’re too dry or too cold. A damp paper towel in the microwave fixes this fast. If they’re still cracking, your pack may be old — fresh tortillas are noticeably more pliable.

For the Slaw:

  • 1 cup green cabbage thinly shredded
  • 1⁄2 cup red cabbage thinly shredded
  • 1⁄4 cup fresh cilantro leaves roughly chopped
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp mayonnaise or plain Greek yogurt
  • 1 pinch sea salt

For the Assembly:

  • 8 pieces small corn tortillas warm before serving
  • 1⁄2 cup Mexican crema or sour cream for drizzle
  • 1 medium avocado sliced
  • 1⁄4 cup crumbled cotija cheese optional garnish

Instructions
 

  • Prepare the Marinade: In a mixing bowl, whisk together lime juice, olive oil, cumin, smoked paprika, garlic powder, chili powder, and sea salt until well combined.
  • Marinate the Chicken: Place the chicken thighs in the marinade and coat evenly. Cover and refrigerate for at least 20 minutes (up to 2 hours for deeper flavor).
  • Make the Slaw: In another bowl, combine green and red cabbage, chopped cilantro, lime juice, mayonnaise (or Greek yogurt), and a pinch of sea salt. Mix well and chill until serving.
  • Grill the Chicken: Heat your grill or grill pan to medium-high (about 400°F / 200°C). Grill chicken thighs for 5–6 minutes per side, or until internal temperature reaches 165°F (75°C) and the outside has a golden char. Rest for 2 minutes, then slice thinly.
  • Warm the Tortillas: Lightly toast corn tortillas on the grill or in a dry skillet for 30 seconds per side to make them pliable and aromatic.
  • Assemble the Tacos: Spread a bit of crema on each tortilla, then layer with sliced grilled chicken, cabbage slaw, avocado slices, and finish with cotija cheese if using.
