This burrito bowl is built around chipotle-marinated chicken thighs, cilantro lime rice, and a two-minute crema that ties everything together. It takes about an hour start to finish, most of which is hands-off marinating time. If you want a filling weeknight dinner that comes together without much fuss and reheats well the next day, this is a solid one to have in the rotation.

The short version of why this works

Two things matter most here. First, chicken thighs. They stay juicy even if you cook them a minute or two longer than planned, which makes them much more forgiving than breasts for a beginner. Second, the crema. It only takes four ingredients and about 90 seconds to stir together, but it does a lot of work — the fat in the sour cream softens the heat from the chipotle, and the lime juice keeps it from tasting heavy. Without it, the bowl is fine. With it, everything clicks.

Troubleshooting

  • The chicken is sticking to the skillet: The pan probably wasn’t hot enough before you added the chicken. Let it preheat for a full two minutes over medium-high, then add the oil. If it sticks when you try to flip it, give it another 60 seconds — it will release on its own when it’s ready.
  • The rice is mushy: This usually means too much water or the lid came off too early. Stick to the 1 cup rice to 2 cups water ratio and resist lifting the lid during the 18-minute simmer. If it’s already done and sitting wet, take the lid off and let it steam dry for a few minutes off the heat.
  • The crema is too spicy: One chipotle pepper in adobo is a real kick for anyone not used to it. Start with half a pepper, taste, and add more. You can always stir in a little extra sour cream to dial it back if you’ve gone too far.
  • The avocado turned brown before serving: Slice it right before you build the bowls, not ahead of time. If you’re meal prepping, store the avocado whole and slice it when you’re ready to eat — skip the garnish of pre-sliced avocado on stored portions, not worth the extra effort of trying to keep it green.
  • The bowl tastes flat: Taste everything before assembling. The rice and beans both need to be seasoned on their own. A pinch of salt on the beans and an extra squeeze of lime on the rice before building the bowl makes a noticeable difference.

Keeping and reheating

Store the components separately if you can — the rice, chicken, beans, and crema each keep better on their own than mixed together. In the fridge, everything is good for up to 4 days in airtight containers. To reheat, warm the chicken and rice in a skillet over medium heat with a splash of water to keep things from drying out, or microwave in 60-second intervals, stirring between each. The crema keeps in the fridge for up to 5 days and doesn’t need reheating. Fresh toppings like the tomatoes, lettuce, and avocado should be added after reheating, not before. The chicken freezes well for up to 2 months — thaw overnight in the fridge before reheating.

Ingredients
 
 

For the Chipotle Chicken:

  • 1 pound boneless skinless chicken thighs organic recommended
  • 2 tablespoons olive oil
  • 2 teaspoons chipotle chili powder or 1 chipotle pepper in adobo, finely chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt or to taste
  • 1 clove garlic minced

For the Cilantro Lime Rice:

  • 1 cup long grain white rice rinsed
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon lime juice about 1/2 lime
  • 2 tablespoons chopped fresh cilantro

For the Bowl Fillings & Toppings:

  • 1 cup black beans cooked or canned, rinsed and drained
  • 1 cup corn kernels fresh, frozen and thawed, or canned
  • 1 cup cherry tomatoes halved
  • 1 medium avocado sliced
  • 1 piece jalapeño thinly sliced (optional)
  • 1 cup romaine lettuce shredded

For the Chipotle Lime Crema:

  • ½ cup sour cream or Greek yogurt full-fat preferred
  • 1 piece chipotle pepper in adobo sauce finely chopped
  • 1 tablespoon lime juice
  • ⅛ teaspoon garlic powder

Instructions
 

  • Marinate the Chicken: In a bowl, combine olive oil, chipotle chili powder, smoked paprika, cumin, salt, and minced garlic. Add chicken thighs and coat thoroughly. Marinate covered in the fridge for at least 20 minutes (up to 1 hour for deeper flavor).
  • Cook the Rice: Combine rinsed rice, water, and salt in a pot; bring to a boil. Reduce to a simmer, cover, and cook for 18 minutes (or per package instructions) until water is absorbed. Fluff with a fork and fold in cilantro and lime juice. Set aside.
  • Cook the Chicken: Heat a large skillet over medium-high heat. Sear chicken thighs for 5–6 minutes per side until charred and cooked through (internal temperature should reach 165°F / 74°C). Let rest for 5 minutes before slicing into strips.
  • Prepare Toppings: While chicken rests, prep your toppings: halve cherry tomatoes, slice avocado, shred lettuce, and slice jalapeño if using.
  • Make Chipotle Lime Crema: Blend or whisk sour cream with chipotle pepper, lime juice, and garlic powder until smooth. Adjust seasoning to taste.
  • Assemble the Bowls: In wide bowls, layer a base of cilantro lime rice, then arrange sliced chicken, black beans, corn, tomatoes, avocado, lettuce, and jalapeños. Drizzle generously with chipotle lime crema.

FAQ

Can I use chicken breasts instead of thighs?

Yes, but watch the cook time carefully. Breasts cook faster and dry out quickly, so check for doneness at 4 minutes per side rather than 5 to 6.

What if I can’t find chipotle chili powder?

Regular chili powder plus a pinch of smoked paprika gets you close. It won’t have the same smokiness, but the flavor will still work well with the rest of the bowl.

Do I have to marinate the chicken for the full hour?

No — 20 minutes is enough to get good flavor on the surface. The longer marinate mostly deepens the smokiness, so if you’re short on time, don’t stress it.

Can I make this vegetarian?

Yes, swap the chicken for portobello mushrooms or extra-firm tofu and use the same marinade. Cook mushrooms in the skillet for about 4 minutes per side; press tofu dry before marinating so it browns instead of steaming.

Is there a dairy-free option for the crema?

Use a full-fat plain coconut yogurt or a thick dairy-free sour cream in place of the sour cream or Greek yogurt. The texture and tang will be slightly different but it still works as a sauce.

Can I use instant rice to save time?

You can, but cook it according to the package directions first, then stir in the lime juice and cilantro. Just know that instant rice tends to be softer and less distinct in texture than long grain rice cooked from scratch.
