These baked beans start on the stovetop and finish low and slow in the oven, which is what gives them a thick, clingy sauce instead of a watery one. The ingredient list is short and mostly pantry staples — ketchup, molasses, smoked paprika, navy beans — so this is genuinely easy to pull together on a weeknight. Make them once and they’ll become your default cookout side.

The technique that matters

The two-step cook — simmer on the stove, then bake covered in the oven at a low 160°C (320°F) — is what separates good baked beans from great ones. The stovetop simmer gets everything hot and starts melding the sauce. The long oven bake does the real work: the heat is gentle and even, so the beans soften without bursting and the sauce reduces slowly into something thick and glossy rather than scorched on the bottom. Don’t rush it by cranking the temperature. Low and slow here is not optional — it’s the whole point. Stirring halfway through also matters; the beans on top dry out faster, so folding them back into the sauce keeps the texture consistent throughout.

Smart swaps

  • Navy beans: These are the classic choice because they’re small and hold their shape well after two hours in the oven. Cannellini or Great Northern beans work fine. Kidney beans are too firm and stay a bit starchy — skip them here.
  • Molasses: This is the ingredient people are most likely to skip, but don’t. It’s what gives the sauce its dark color and slightly bitter depth that stops the whole thing from tasting like sweet ketchup. Blackstrap molasses is stronger and more bitter — regular (unsulphured) molasses is the better call.
  • Apple cider vinegar: White wine vinegar works in a pinch. Plain white vinegar is sharper; use a little less if that’s all you have.
  • Smoked paprika: Regular paprika won’t give you the same smoky backbone. If you’re out, a small amount of liquid smoke (start with ¼ tsp) can fill that gap — skip the garnish of extra paprika on top, not worth the extra dish.

Common problems and fixes

  • Sauce is still thin after two hours: Remove the lid for the last 20 minutes and return the pot to the oven. The exposed surface will reduce quickly. Every oven runs a little differently, so don’t be surprised if yours needs this.
  • Beans are mushy: This usually happens when canned beans are overcooked before they go in — make sure you’re starting with drained, rinsed beans that are still firm to the touch. Also check that your oven isn’t running hot; an inexpensive oven thermometer is worth having.
  • Sauce tastes flat or one-dimensional: Taste before it goes in the oven and adjust. If it tastes too sweet, add a splash more apple cider vinegar. If it tastes sharp, a pinch more brown sugar fixes it. Salt also has a big effect here — under-seasoned beans taste dull no matter how long you bake them.
  • Beans stuck to the bottom of the pot: This means the heat was too high during the stovetop simmer, or the pot wasn’t covered tightly in the oven. Use a heavy pot with a well-fitting lid, and keep the stovetop simmer genuinely gentle — small bubbles, not a rolling boil.
  • Onions are still crunchy in the finished dish: They need a full 8 minutes in the oil before anything else goes in. If they’re not soft and lightly golden at that point, keep cooking. Undercooked onions don’t fully break down during the bake and leave an unpleasant texture.

Ingredients
 
 

  • 2 tbsp olive oil extra virgin for enhanced flavor
  • 1 cup onion finely chopped
  • 2 cloves garlic minced
  • 3 cups canned navy beans drained and rinsed
  • 1 cup ketchup
  • ¼ cup brown sugar packed
  • 2 tbsp molasses
  • 2 tbsp apple cider vinegar
  • 1 tbsp smoked paprika
  • 1 tsp mustard powder
  • 1 tsp salt
  • ½ tsp black pepper freshly ground

Instructions
 

  • Preheat your oven to 160°C (320°F).
  • In a large, oven-safe pot, heat the olive oil over a medium flame. Add the chopped onions and sauté until they become translucent and golden, about 8 minutes. The aroma should be sweet and slightly caramelized.
  • Add the minced garlic to the onions and cook for another 1-2 minutes until fragrant.
  • Stir in the drained navy beans, making sure they're well coated with the oil, onion, and garlic mixture.
  • Pour the ketchup, brown sugar, molasses, apple cider vinegar, smoked paprika, mustard powder, salt, and black pepper into the pot. Stir thoroughly to combine all ingredients.
  • Bring the mixture to a gentle simmer, letting it bubble softly for about 5 minutes. This will meld the flavors beautifully.
  • Cover the pot and transfer it to the preheated oven. Bake for 2 hours, stirring halfway through the cooking time to ensure even cooking and flavor distribution.

Yes — these actually taste better the next day. Store them covered in the fridge for up to four days and reheat gently on the stovetop with a splash of water to loosen the sauce, which thickens considerably as it cools.

Do I have to use an oven-safe pot, or can I transfer to a baking dish?

You can transfer to a baking dish — a deep 9×13 or a large casserole dish both work. Cover it tightly with foil instead of a lid, pressing the edges down so steam doesn’t escape and dry out the top layer.

Can I use dried beans instead of canned?

You can, but they need to be fully cooked before they go into this recipe — raw dried beans won’t soften properly in the sauce. Cook them separately until just tender, then drain and use in place of the canned beans.

How spicy is this recipe as written?

Not spicy at all — the base recipe is smoky and sweet with no real heat. The optional chipotle pepper in adobo sauce (noted on the recipe card) adds a mild-to-medium kick; start with half a pepper if you’re unsure, taste, and add more.
