This is a soy-ginger glazed chicken thigh bowl over jasmine rice, topped with raw carrots, cucumber, and scallions. The sauce takes about five minutes to whisk together, the chicken cooks in under ten, and the whole thing comes together in under an hour. It holds up well in the fridge, which makes it genuinely useful on a busy week.

Shopping notes

  • Jasmine rice: Thai jasmine is the call here — it has a faint floral smell when cooked that generic long-grain rice doesn’t. Most grocery stores carry it; look for bags labeled “Thai jasmine” rather than just “jasmine blend.”
  • Rice vinegar: Plain, unseasoned rice vinegar. Seasoned rice vinegar has added sugar and salt that will throw off the sauce balance.
  • Sesame oil: Buy toasted (also labeled “roasted”) sesame oil, not plain. The flavor difference is significant. A small bottle lasts a long time stored in a cool cabinet.
  • Persian cucumbers: Thinner skin, fewer seeds, and they stay crisp longer after slicing — worth grabbing over a standard English cucumber if you’re prepping ahead.
  • Chicken thighs: Boneless, skinless is what the recipe calls for. If you can only find bone-in, add about 8 minutes to the cook time and cut the meat off before saucing.

What makes this version work

Two things matter most here. First, getting the chicken properly golden before the sauce goes in — if you add the sauce too early, the chicken steams instead of sears and you lose the browned edges that give the dish some texture. Let the pan get hot, don’t crowd the strips, and resist moving them for the first two minutes. Second, the sauce reduction at the end is short but important: two to three minutes over medium heat turns a thin, salty liquid into a glaze that actually clings to the meat. Pull it off the heat as soon as it looks glossy and coats the back of a spoon — another minute and it can go sticky and over-sweet.

Mistakes to avoid

  • Skipping the rinse on the rice: Unrinsed jasmine rice turns gummy. Rinse it in a fine-mesh strainer under cold water until the water runs mostly clear — takes about 30 seconds and makes a real difference in texture.
  • Using cold chicken straight from the fridge: Cold chicken drops the pan temperature fast, leading to uneven cooking. Pull the strips out 10 to 15 minutes before you cook them.
  • Overcrowding the pan: Too many strips at once and the chicken releases steam instead of browning. Cook in two batches if your pan is smaller than 12 inches.
  • Making the sauce too far ahead without storing it separately: If you’re meal-prepping, keep the sauce and the cooked chicken in separate containers. Chicken sitting in the glaze overnight gets oversalted and the texture suffers. Reheat the chicken plain, then warm the sauce and toss just before serving — skip the garnish on reheated bowls, not worth the extra dish.
  • Dressing the vegetables: The raw carrots and cucumber are meant to be plain — they’re there for crunch and freshness against the salty chicken. Adding dressing makes the bowl wet and muddies the contrast.

For the Soy-Ginger Sauce:

  • ¼ cup low sodium soy sauce
  • 2 tablespoons honey or brown sugar for deeper notes
  • 1 ½ tablespoons fresh ginger grated
  • 2 cloves garlic minced
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame oil toasted

Instructions
 

  • Cook the Rice: In a rice cooker or saucepan, cook 2 cups of jasmine rice according to the package instructions. Fluff with a fork and keep warm.
  • Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, grated ginger, garlic, rice vinegar, and sesame oil. Set aside.
  • Cook the Chicken: Heat 1 tablespoon of neutral oil in a non-stick pan over medium-high heat. Add the chicken strips and sauté for 6–7 minutes, until golden brown and fully cooked.
  • Add the Sauce: Reduce heat to medium. Pour the sauce over the chicken and stir well to coat. Simmer for 2–3 minutes until the sauce thickens slightly and glazes the chicken.
  • Assemble the Bowls: Divide cooked rice into 4 bowls. Top each with glazed chicken, shredded carrots, cucumber slices, and chopped scallions.

Can I use chicken breast instead of thighs?

If it’s still thin, a small slurry of half a teaspoon of cornstarch mixed into a teaspoon of cold water, stirred in quickly, will fix it.
