This chicken shawarma uses boneless thighs marinated in yogurt, lemon, and a short list of pantry spices, then cooked in a cast-iron skillet or grill pan — no rotisserie required. The real reason to make it: the chicken reheats beautifully, so one batch covers dinner tonight and fast lunches for the next two days. It’s genuinely weeknight-friendly once the marinating is done.

Shopping notes

  • Smoked paprika vs. sweet: The recipe calls for smoked if available — it’s worth seeking out. Smoked paprika adds a depth that regular sweet paprika can’t replicate in a skillet, where you don’t have actual smoke.
  • Greek yogurt: Full-fat works best here. Low-fat versions have more water and can make the marinade watery, which slows browning.
  • Tahini sauce: Store-bought is completely fine. Check the ingredients — good tahini sauce should be mostly sesame paste, lemon, and garlic. Skip the garnish of extra sesame seeds on the finished wrap — not worth the extra dish.
  • Flatbread vs. pita: Either works. Thinner flatbread wraps more easily around a generous filling; standard pita pockets are better if you’re packing these for lunch.

Why this recipe works

Two things actually matter here. First, the yogurt in the marinade. Yogurt is mildly acidic, which tenderizes the meat slowly without breaking down the texture the way a straight lemon-juice marinade can if left too long. It also helps the spices cling to the surface, which means better browning. Second, chicken thighs over breasts. Thighs have enough fat to stay juicy even if your pan runs a little hot or you pull them a minute late — which is exactly what happens on a busy weeknight. The combination means you get a forgiving cook with a lot of flavor payoff.

If something goes sideways

  • The chicken is steaming instead of charring: Your pan wasn’t hot enough before the chicken went in, or the pieces are too close together. Pull the chicken out, let the pan get properly hot (a drop of water should evaporate immediately), and cook in two batches if needed.
  • The outside is charred but the inside isn’t cooked through: Thighs vary in thickness. After grilling, move them to a 375°F oven for 5–8 minutes to finish cooking without burning the outside further.
  • The marinade smells bitter after cooking: Garlic that burned in the pan. Wipe the pan between batches if there’s a lot of residue, or reduce the heat slightly — the garlic in the marinade can scorch before the chicken is done.
  • The wrap falls apart: The flatbread wasn’t warm enough to be pliable. Wrap it in a damp paper towel and microwave for 20 seconds, or hold it over a gas burner for a few seconds per side.
  • The chicken tastes flat despite the spices: It was under-marinated. Two hours is the minimum; less than that and the spices sit mostly on the surface. Salt also needs time to work into the meat — don’t skip it or reduce it in the marinade.

Keeping and reheating

Store cooked, sliced chicken in an airtight container in the fridge for up to 4 days — keep it separate from the vegetables and bread so nothing gets soggy. To reheat, a dry skillet over medium heat for 2–3 minutes works better than the microwave, which tends to make the edges rubbery; if you do use the microwave, cover the chicken and go in 30-second bursts. For longer storage, freeze the cooked sliced chicken in a zip-lock bag with the air pressed out — it keeps well for up to 2 months. Thaw overnight in the fridge and reheat in the skillet. Uncooked marinated chicken can also be frozen raw in the marinade; thaw in the fridge and it’ll finish marinating as it defrosts.

  • 2 pounds boneless skinless chicken thighs trimmed of excess fat for best texture
  • 4 tablespoons plain Greek yogurt full-fat recommended
  • 2 tablespoons extra-virgin olive oil cold-pressed for richest flavor
  • 3 cloves garlic minced or grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika smoked if available
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • ½ teaspoon cayenne pepper optional, for heat
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon freshly cracked black pepper
  • 1 medium lemon juiced

For Assembling Shawarma Wraps:

  • 4 pieces flatbread or pita lightly warmed
  • 1 cup shredded lettuce
  • 1 cup sliced cucumbers
  • 1 cup diced tomatoes use ripe Roma tomatoes
  • ½ cup tahini sauce or garlic sauce store-bought or homemade

Instructions
 

  • In a large mixing bowl, combine yogurt, olive oil, garlic, all the ground spices, salt, pepper, and lemon juice to form a marinade.
  • Add the chicken thighs, coating thoroughly. Cover and marinate in the fridge for at least 2 hours, preferably overnight for enhanced flavor infusion.
  • Preheat a grill pan or cast-iron skillet over medium-high heat (~400°F or 200°C). Lightly oil the pan.
  • Grill the chicken thighs for about 5–6 minutes per side until nicely charred and the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing thinly against the grain.
  • To assemble, place sliced chicken on warmed pita or flatbread. Top with lettuce, cucumbers, tomatoes, and a generous drizzle of tahini or garlic sauce. Wrap tightly.
