Grilled Apple Chicken With Cinnamon Glaze

Chicken breasts get butterflied, stuffed with cinnamon-sugar apple slices, and grilled over medium heat until the filling caramelises and the outside picks up some char. A quick cornstarch-thickened apple cider glaze goes on at the end — it takes about three minutes on the stovetop and makes the whole thing look like you put in more effort than you did. This is a genuinely easy weeknight dinner that also holds up well enough to serve to guests.

Why this recipe works

Two things make this recipe reliable. First, pounding the butterflied breasts to an even half-inch thickness before stuffing means the chicken cooks through in a predictable 12–14 minutes per side — no raw centre, no dried-out edges. Uneven thickness is the most common reason grilled stuffed chicken disappoints. Second, the glaze uses cornstarch rather than reduction alone, which means it thickens in under three minutes and stays glossy when spooned over the hot chicken instead of running straight off. You don’t need to babysit it.

Ingredient notes

  • Apple cider (not vinegar): The recipe calls for unfiltered apple cider — the cloudy, pressed kind sold near the juice aisle, not hard cider and absolutely not apple cider vinegar. One cup of vinegar would make the glaze sharp and nearly inedible. If you only have clear apple juice, it works fine; the glaze will be a little lighter in flavour.
  • Apple variety: Fuji and Honeycrisp both hold their shape on the grill without turning to mush. Softer varieties like McIntosh will break down inside the chicken, which isn’t the end of the world but makes for a messier slice.
  • Granulated sugar: Plain white sugar is what you want here — it caramelises cleanly. Brown sugar will work in a pinch but adds a molasses note that can compete with the cinnamon.
  • Toothpicks: Wooden toothpicks are fine; just soak them in water for 10 minutes before using so they don’t scorch on the grill. Skip any decorative garnish on the finished plate — not worth the extra dish.

If something goes sideways

  • The filling is leaking out during grilling: The toothpicks aren’t holding if the chicken was overstuffed or the breast wasn’t pounded flat enough. Use 3 toothpicks per breast and don’t pile the apple slices more than one layer deep. If it’s already on the grill and leaking, just leave it — the escaped apple slices will char a little on the grates, which is fine.
  • The glaze won’t thicken: The cornstarch needs to be fully dissolved in cold cider before the pan goes on the heat. If you add it to warm liquid it clumps. If it’s already on the stove and still thin after 3 minutes, mix a small amount of cold water with an extra half-teaspoon of cornstarch and whisk it in.
  • The chicken is cooked through but pale with no char: The grill wasn’t hot enough, or the grates weren’t oiled. For the next batch, let the grill preheat a full 10 minutes and oil the grates just before the chicken goes on. A little char on stuffed chicken is flavour, not a mistake.
  • The inside reads 165°F but the apples are still crunchy: Slice the apples thin — about an eighth of an inch. Thick slices won’t soften enough in the time it takes the chicken to cook. If you prefer very soft apples, give the slices a two-minute head start in a dry pan before stuffing.
  • The chicken is sticking to the grill when you try to flip: It’s not ready to flip yet. Chicken releases naturally from the grates once a crust has formed. Give it another minute or two before forcing it.

Ingredients
 
 

  • 1 pound boneless, skinless chicken breasts about 2 large
  • 2 tablespoons granulated sugar
  • ¼ teaspoon ground cinnamon
  • 2 medium apples such as Fuji or Honeycrisp, peeled, cored, and thinly sliced
  • 1 cup unfiltered apple cider
  • 1 tablespoon cornstarch
  • 1 tablespoon cooking oil or non-stick spray for greasing grill grates

Instructions
 

  • Preheat a charcoal or electric grill to medium heat (approximately 375°F / 190°C). While the grill heats, place the chicken breasts on a clean cutting board and butterfly each breast by slicing horizontally through the thickest part, opening like a book. Pound to an even ½-inch (1.25cm) thickness using a meat mallet or rolling pin.
  • In a medium bowl, combine the sugar and ground cinnamon. Add the apple slices and toss until evenly coated. Arrange the coated apple slices in a single layer on one half of each butterflied chicken breast. Fold the other half over the apples and secure with 2-3 wooden toothpicks per breast.
  • Lightly oil the grill grates. Place the stuffed chicken breasts on the grill over medium heat. Close the lid and grill for 12-14 minutes per side, turning once, until the internal temperature reaches 165°F / 74°C on an instant-read thermometer and the juices run clear.
  • While the chicken rests, whisk together the apple cider and cornstarch in a small saucepan until the cornstarch is fully dissolved. Place over medium heat and bring to a gentle simmer (about 200°F / 93°C), stirring constantly for 2-3 minutes until the glaze thickens and turns glossy. Remove the toothpicks from the chicken, spoon the warm apple cider glaze over the top, and serve immediately.

  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. The glaze thickens when cold — reheat gently in a skillet with a splash of water to restore its consistency.
  • Make-ahead: Prepare the cinnamon-apple filling and stuff the chicken up to 8 hours ahead. Keep covered and refrigerated until ready to grill.
  • Substitution: Swap apple cider vinegar for unfiltered apple cider (non-alcoholic) for a sweeter, less tangy glaze. If using cider, reduce the sugar to 1 tablespoon.
