This is a 15-minute fruit salad built around ripe papaya, a honey-lime dressing, toasted macadamia nuts, and a handful of greens. No cooking required, one bowl to wash. It works as a side next to grilled fish or chicken, or on its own as a light lunch when you want something fresh without much effort.

Before you start

The two things that actually matter here are the ripeness of your papaya and toasting the macadamia nuts. A ripe papaya should give slightly when pressed, like a ripe avocado — if it’s still firm, the flavor will be bland and starchy, and no amount of honey-lime dressing will fix that. For the nuts, a dry skillet over medium heat for 3 to 4 minutes is all you need; stir them constantly and pull them off the heat the moment they smell nutty. Skip the garnish of extra cilantro sprigs on top — not worth the extra cutting board mess when the chopped cilantro in the salad already does the job.

Mistakes to avoid

  • Dressing the salad too far ahead. The lime juice starts breaking down the papaya’s texture within about 20 minutes. Whisk the dressing in the same bowl you’ll serve from, add the ingredients, toss, and eat. The recipe’s 5-minute rest is fine; anything beyond 30 minutes turns the papaya soft and watery.
  • Using bottled lime juice. The dressing relies on both lime juice and lime zest for its flavor. Bottled juice lacks the brightness, and you can’t get zest from a bottle — just use one fresh lime, which gives you both.
  • Skipping the salt on the papaya. Papaya can taste flat on its own. The quarter teaspoon of salt in the dressing isn’t just seasoning the greens — it’s pulling out the fruit’s natural sweetness. Don’t reduce it.
  • Slicing the papaya too thick. Thick wedges make the salad awkward to eat and mean less dressing coverage per bite. Aim for pieces no thicker than half an inch so every forkful gets some dressing and some nut.
  • Adding warm nuts straight from the pan. Hot macadamia nuts will wilt the arugula or spinach on contact. Spread them on the cutting board for a few minutes to cool before adding them to the bowl.

Ingredients
 
 

For the Salad

  • 1 large ripe papaya about 1 lb / 450g, peeled, deseeded, and sliced into thin wedges
  • ¼ cup red onion 35g, thinly sliced
  • ¼ cup fresh cilantro 10g, chopped
  • ¼ cup macadamia nuts 35g, lightly toasted and chopped
  • ½ cup arugula or baby spinach 15g, fresh

For the Dressing

  • 1 tablespoon honey 21g
  • 1 tablespoon lime juice 15ml, freshly squeezed, about 1/2 large lime
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil 15ml
  • ¼ teaspoon salt to taste
  • ⅛ teaspoon black pepper freshly ground

Instructions
 

  • Toast the macadamia nuts in a small dry skillet over medium heat for 3 to 4 minutes, stirring constantly, until fragrant and lightly golden. Transfer to a plate to cool. In a large mixing bowl, combine the sliced papaya, red onion, cilantro, toasted macadamia nuts, and arugula or baby spinach.

  • In a small bowl, whisk together the honey, lime juice, lime zest, olive oil, salt, and black pepper until well combined.

  • Drizzle the dressing over the papaya mixture and gently toss to coat all ingredients evenly.
  • Allow the salad to sit for 5 minutes at room temperature to let the flavours meld. Serve immediately as a light side dish or appetizer.

Notes

Storage: This salad is best eaten immediately. Dressed leftovers can be refrigerated in an airtight container for up to 4 hours, but the papaya will soften and release juice beyond that.
Make-Ahead: Slice the papaya, toast and cool the nuts, and whisk the dressing up to 4 hours ahead. Store each component separately in the fridge and toss together just before serving.
Substitutions: Swap macadamia nuts for toasted cashews (closest in buttery flavour) or slivered almonds (firmer crunch). Use mango if ripe papaya is unavailable. Replace honey with agave or maple syrup for a vegan version.
Heat Adjustment: For a spicy kick, add 1/4 teaspoon red chili flakes or a finely sliced bird’s eye chili to the dressing.
Pro Tip: Zest the lime before juicing it — it’s much easier to zest a whole lime than a squeezed one.

How do I know if my papaya is ripe enough to use?
