This is a one-pot chicken and orzo that comes together in 45 minutes using a single pan. The orzo cooks directly in the broth and cream, so you get a thick, saucy result without making a separate sauce. It feeds four comfortably, and it scales up cleanly if you need to feed more.

The short version of why this works

Two things drive this recipe. First, searing the chicken thighs before anything else builds a layer of browned fond on the pan bottom — that fond dissolves into the broth as everything simmers, and it’s where most of the depth in the final dish comes from. Don’t rush that step or skip it. Second, the orzo absorbs liquid as it cooks, which naturally thickens the cream and broth into a sauce without any flour or cornstarch. The ratio of liquid to pasta is calibrated for this, so resist the urge to add extra broth mid-cook — the sauce will look thin at first and then tighten up in the last few minutes and during the five-minute rest.

Ingredient notes

  • Sun-dried tomatoes: Use the kind packed in oil, not the dry-packed variety. Dry-packed tomatoes are too leathery here and won’t soften properly in the cook time. Drain them well before adding so you don’t get greasy spots in the sauce.
  • Heavy cream vs. half-and-half: Half-and-half works and cuts the richness, but the sauce will be noticeably thinner. If you go that route, plan to simmer uncovered for an extra two or three minutes at the end to compensate.
  • Parmesan: Pre-grated Parmesan from a shaker container won’t melt smoothly — it tends to clump. Grate it fresh from a block for a sauce that stays silky. Skip the garnish of extra Parmesan on top; it doesn’t add enough to justify the extra dish.
  • Dried Italian herbs vs. Herbes de Provence: Either works. Herbes de Provence has lavender in some blends, which can taste floral and slightly soapy to some people. If you’re cooking for a crowd and don’t know everyone’s preferences, plain Italian seasoning is the safer call.

What can go wrong

  • The orzo sticks to the bottom and scorches: This happens when the heat is too high after you cover the pan. Once you reduce to low and add the lid, check at the ten-minute mark and give it a gentle stir. If the liquid looks like it’s gone, add a splash of broth — no more than a quarter cup.
  • The chicken is done but the orzo is still chalky: Pan size matters here. In a pan that’s too small, the orzo piles up and doesn’t cook evenly. Use a pan that’s at least 12 inches wide so the orzo spreads out in a thin, even layer under the chicken.
  • The sauce is watery at serving time: You probably skipped or shortened the five-minute rest. The orzo keeps absorbing liquid off the heat. Let the pan sit uncovered and the sauce will tighten noticeably.
  • The garlic tastes bitter: Thirty seconds over medium heat is enough. If your pan is still very hot from searing the chicken, the garlic can burn in half that time. Give the pan a minute to cool down slightly before adding it.
  • Spinach releases too much water and thins the sauce: This usually means the spinach was wet when it went in. Dry it well after washing, or use it straight from a dry bag. Add it in two batches rather than all at once so it wilts quickly without steaming and releasing extra moisture.

  • 4 pieces boneless, skinless chicken thighs trimmed of excess fat
  • 1 teaspoon kosher salt divided
  • ½ teaspoon freshly ground black pepper divided
  • 2 tablespoons extra virgin olive oil for searing
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes julienned, packed in oil and drained
  • 1 teaspoon dried Italian herbs or Herbes de Provence
  • 1 cup dry orzo pasta uncooked
  • 2 cups chicken broth preferably low sodium
  • 1 cup heavy cream or substitute with half-and-half
  • 2 cups baby spinach lightly packed
  • ⅓ cup freshly grated Parmesan cheese plus extra for garnish

Instructions
 

  • Season chicken thighs on both sides with 1/2 teaspoon of kosher salt and 1/4 teaspoon black pepper.
  • Heat olive oil in a large sauté pan or braiser over medium-high heat. Add chicken and sear for 4-5 minutes per side until golden but not fully cooked through. Remove and set aside.
  • In the same pan, reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant. Stir in sun-dried tomatoes and dried herbs. Sauté for 1-2 minutes to release oils and deepen flavor.
  • Add orzo and toast for 1 minute, stirring constantly. Then pour in chicken broth and cream.
  • Return chicken thighs to the pan, nestling them in the liquid. Bring to a gentle simmer, reduce heat to low, cover with lid, and cook for 15-18 minutes. Orzo should be tender, and chicken cooked through (internal temperature of 165°F / 74°C).
  • Remove lid and stir in spinach and Parmesan cheese. Cook for another 1-2 minutes until spinach wilts and sauce thickens. Taste and adjust seasoning with remaining salt and pepper if needed.
  • Remove from heat and let sit 5 minutes before serving. This allows the sauce to set and flavors to meld.

FAQ

Can I double this recipe to feed eight people?

Yes, and it’s one of the easier recipes to double. Use the largest pan you have — a wide braiser or a 6-quart straight-sided skillet — so the orzo still has room to cook in an even layer. The cook time stays roughly the same, but check the chicken temperature at the 15-minute mark since thicker pans with more mass sometimes run slightly hotter.

Can I use chicken breasts instead of thighs?

You can, but they’re more likely to dry out during the 15-18 minute simmer. If you use breasts, cut them into large chunks rather than leaving them whole, and start checking the internal temperature at 12 minutes.

Can I make this ahead of time?

It reheats well, but the orzo continues absorbing liquid as it sits, so leftovers will be much thicker — almost like a baked pasta. Reheat gently on the stovetop with a splash of chicken broth stirred in to loosen it back up.

Is there a dairy-free version?

Full-fat coconut cream is the most practical substitute for the heavy cream — it gives a similar richness and the coconut flavor is mild enough that the garlic and sun-dried tomatoes mostly cover it. Skip the Parmesan or use a dairy-free hard cheese alternative, though the sauce won’t be quite as thick.

What can I use instead of orzo if I can’t find it?

Small pasta shapes like ditalini or acini di pepe work well because they’re similarly sized and absorb liquid at roughly the same rate. Avoid larger shapes — they won’t cook through in the same time and the liquid ratio won’t be right.

How do I know when the chicken is fully cooked without a thermometer?

The most reliable visual check is to slice into the thickest part of one thigh — the meat should be completely opaque with no pink, and the juices should run clear. That said, a cheap instant-read thermometer is worth having for this kind of recipe where the chicken finishes submerged in liquid and color alone can be misleading.
