The Bramble is a gin sour with blackberry liqueur drizzled over crushed ice — simple to make, genuinely good, and ready in under ten minutes. It was invented by London bartender Dick Bradsell in the 1980s, and it holds up because the proportions are honest: tart lemon, dry gin, a little sweetness, and a slow pour of crème de mûre that bleeds through the ice as you drink. If you want a proper cocktail without a full bar setup, this is a strong place to start.

What makes this version work

Two things matter here. First, fresh lemon juice — not bottled. Bottled juice is flatter and slightly bitter in a way that throws off the whole balance at these small volumes. Squeeze it right before you shake. Second, the crème de mûre goes in after straining, poured slowly over the back of a spoon or just drizzled carefully from the bottle. If you shake it in with everything else, you lose the layered look and the way the flavor shifts as you sip down through the glass. That slow pour is the whole point of the drink.

About the ingredients

  • Crème de mûre: A blackberry liqueur — not the same as crème de cassis, which is made from blackcurrants and tastes noticeably different. Cassis works as a substitute (the recipe card mentions this), but the flavor is sharper and less jammy. If your grocery store carries neither, Chambord is a closer stand-in than cassis.
  • Gin: A standard London dry gin works well. Heavily floral or cucumber gins can fight with the lemon; save those for a gin and tonic.
  • Simple syrup: The recipe calls for a 1:1 ratio. If you only have 2:1 (rich syrup), use about half the volume — it’s twice as sweet.
  • Crushed ice: A zip-lock bag and a rolling pin gets you there in about 30 seconds if you don’t own an ice crusher.

What can go wrong

  • The drink tastes flat or too sweet: The lemon juice is almost certainly the culprit. Old lemon juice loses its brightness fast — use juice squeezed within the last hour.
  • The crème de mûre sinks straight to the bottom and disappears: Pour it more slowly, and make sure the glass is well-packed with ice. Loose ice gives the liqueur nowhere to rest.
  • The cocktail is too diluted: Don’t over-shake. Ten to twelve hard shakes is enough. Shaking longer melts the ice in the shaker and waters everything down before it even hits the glass.
  • The drink is too sour: Lemons vary a lot in acidity. If yours are very tart, add an extra 2–3 ml of simple syrup rather than reducing the lemon — cutting the lemon too much flattens the drink.
  • The glass isn’t cold enough: The recipe tells you to fill the glass with crushed ice to chill it, then strain over that same ice. Don’t swap the ice out — just strain directly over what’s already there.

Storage and reheating

The mixed base — gin, lemon juice, and simple syrup, without the crème de mûre — keeps well in the fridge for up to 48 hours in a sealed jar or bottle. Shake it before using since the syrup can settle. This is the practical part: if you’re making Brambles for a group, batch the base at a ratio of 2 parts gin to 1 part lemon to 0.5 parts simple syrup, refrigerate it, then shake individual portions over ice to order and add the crème de mûre fresh each time. Skip the garnish — not worth the extra prep when you’re pouring for a crowd. The crème de mûre itself keeps indefinitely in a cool, dark cupboard once opened.

  • 25 ml Fresh lemon juice
  • 12.5 ml Simple syrup 1:1 ratio of sugar to water
  • 15 ml Crème de mûre Blackberry liqueur

  • 1 piece Lemon wheel For garnish
  • 2 pieces Blackberries For garnish

Instructions
 

  • Fill an old-fashioned glass with crushed ice to chill the glass.
  • In a separate shaker, combine the gin, fresh lemon juice, and simple syrup. Shake well to blend the flavors smoothly.
  • Strain the mixture over the crushed ice in the glass.
  • Slowly drizzle the crème de mûre over the top, creating a marbling effect as it sinks through the ice.
  • Garnish with a lemon wheel and two plump blackberries to enhance the visual appeal.

Can I make a non-alcoholic version of the Bramble?

Yes, though it takes a bit of work. Replace the gin with a non-alcoholic spirit like Seedlip Spice 94 or simply use a mix of cold water and a small amount of juniper-forward botanical syrup. For the crème de mûre, blend fresh or frozen blackberries with a little sugar and water, strain it, and drizzle that over the top instead — it won’t be identical, but the sour-sweet-berry structure comes through.

Do I need a cocktail shaker, or can I use something else?

Any container with a tight lid works — a mason jar is the most common substitute. The important thing is that the lid seals completely so you can shake hard without spilling.

What’s the best gin to use if I’m buying one specifically for this?

A mid-range London dry gin like Beefeater or Tanqueray is the right call — both are dry enough to let the lemon and blackberry come forward without competing. Avoid anything heavily flavored or aged.

Can I scale this up to make a pitcher for a party?

Absolutely — multiply the gin, lemon juice, and simple syrup by however many servings you need and stir the batch in a jug rather than shaking. Keep the crème de mûre separate and pour it over each individual glass after serving, otherwise the layered effect is lost and the color muddies throughout the whole batch.
