The Hanky Panky is a stirred cocktail built on equal parts gin and sweet vermouth, with a small pour of Fernet-Branca that changes the whole drink. It takes five minutes and three ingredients, which makes it genuinely easy to batch for a group. If you like Negronis or Manhattans, this is worth knowing.

The technique that matters

Stirring is the only real technique here, and it matters more than most people expect. You need 30–45 seconds of steady stirring over ice — not a quick swirl. That time does two things: it chills the drink properly and adds the right amount of dilution, which softens the Fernet-Branca and rounds out the gin. Under-stir and the cocktail tastes sharp and slightly harsh. The other thing worth doing is chilling your coupe glass before you pour — run cold water in it, or keep it in the freezer for a few minutes. A warm glass heats the drink fast, and a Hanky Panky is best cold.

What can go wrong

  • Too much Fernet-Branca: The recipe calls for 7.5 ml for a reason. Fernet is intense — even an extra few millilitres can make the drink taste medicinal rather than herbal. Measure it rather than free-pouring.
  • Watery drink from too much ice melt: This usually happens when you stir in a warm glass or with ice that’s been sitting out. Use fresh ice straight from the freezer and work quickly.
  • Flat, dull flavor: Sweet vermouth goes off once opened. If yours has been in the cupboard (not the fridge) for more than a few weeks, it’s likely oxidized and will make the cocktail taste flat. Store open vermouth in the fridge and use it within a month.
  • Batching for guests and losing balance: When scaling up, pre-mix the gin, vermouth, and Fernet-Branca in the correct ratios in a pitcher or bottle and refrigerate. Do not add ice to the batch — stir each drink individually over ice to order, or stir the whole batch over ice just before serving and strain immediately.
  • Skipping the orange twist: The oils from the twist cut through the bitterness and pull the drink together — don’t skip it. Express the peel firmly over the surface so the oils actually hit the drink, not just the rim of the glass.

Leftovers and make-ahead

You can pre-batch the three spirits up to 48 hours ahead — combine the gin, sweet vermouth, and Fernet-Branca in the correct ratios in a sealed jar or bottle and keep it in the fridge. Do not dilute it in advance. When you’re ready to serve, pour the batch into a mixing glass over ice, stir for 30–45 seconds, and strain into chilled glasses. This approach works well for four to eight drinks at once and means you’re not measuring individual pours while guests are waiting. The pre-mixed, unstirred batch will keep for up to two days refrigerated, though the vermouth will start to soften in flavor after that. There are no real leftovers once a drink is stirred and poured — a diluted, already-chilled cocktail doesn’t hold.

Your questions, answered

Can I use a different gin, or does it have to be London dry?

London dry gin works best because its clean, juniper-forward profile doesn’t compete with the vermouth and Fernet-Branca. A heavily floral or citrus-forward gin can throw the balance off, so if you’re substituting, stick to something fairly classic and dry rather than a heavily flavored craft gin.

What if I can’t find Fernet-Branca — is there a substitute?

Another Italian amaro will work, but the flavor will shift noticeably. Fernet-Branca has a specific menthol-and-herb bitterness that most other amari don’t fully replicate — something like Ramazzotti or Averna is milder and sweeter, so the drink will be less sharp and more approachable, which isn’t necessarily a bad thing.

Which sweet vermouth should I use?

Carpano Antica Formula is the go-to recommendation and genuinely makes a difference here — it’s richer and more complex than standard sweet vermouths. That said, Dolin Rouge or Martini Rosso will produce a perfectly good drink at a lower price point, especially if you’re making a large batch.

How do I scale this up for a party without making it complicated?

Multiply the ingredient amounts by the number of servings and combine everything in a pitcher or bottle the night before — no ice, no dilution. Keep it refrigerated, then stir portions over ice and strain to order, or stir the whole batch over ice right before serving and strain into a large chilled vessel. Budget about 30–45 seconds of stirring per four-drink batch to get the dilution right.
